Spring Delight! Refreshing Dohnanmul (Dewdrop Spinach) Salad Recipe

Made with fresh Dohnanmul, picked straight from the yard! This is a late recipe as it’s now past its prime season, but it’s wonderfully refreshing. ^^

Main Ingredients

  • Dohnanmul (Dewdrop Spinach) 1 handful (about the width of your thumb)

Seasoning Ingredients

  • Soy sauce or Fish sauce 1/2 Tbsp (If using fish sauce, adjust to taste)
  • Sugar 1/2 Tbsp
  • Gochugaru (Korean chili flakes) 1/3 Tbsp
  • Sesame oil 1/2 Tbsp
  • Toasted sesame seeds (sesame salt) 1/2 Tbsp
  • Vinegar 1/2 Tbsp

Cooking Instructions

I found some lovely Dohnanmul growing freshly in the yard, soaking up the spring sunshine. I carefully gathered a handful of this fresh greens. (This recipe is best enjoyed when Dohnanmul is freshest and tender, typically in spring!)

Thoroughly wash the gathered Dohnanmul under running water multiple times. It’s important to rinse it meticulously to ensure no dirt or debris remains.

Drain the washed Dohnanmul completely in a colander. Excess water can dilute the dressing, so gently pat it dry with your hands or let it sit for about 10 minutes to allow the water to drain naturally.

Now, let’s make a delicious seasoning! Prepare the seasoning ingredients in a bowl to mix with the Dohnanmul. First, add 1/2 Tbsp of soy sauce or fish sauce. If you’re using fish sauce, be mindful of its saltiness and start with a small amount, tasting and adjusting as needed.

Next, add 1/2 Tbsp of sesame oil for a rich, nutty aroma. The order of adding seasoning ingredients isn’t strict, so feel free to adjust it to your preference.

Add 1/2 Tbsp of vinegar for a bright, tangy flavor. (Although it’s missing from the recipe photo, don’t forget the vinegar!) Also, add 1/2 Tbsp of sugar for a touch of sweetness. (You can adjust the sugar amount according to your taste.)

If you prefer a little heat, add 1/3 Tbsp of Gochugaru (Korean chili flakes) for color and a subtle kick. You can reduce or omit the chili flakes if you’re making this for children.

Finally, add 1/2 Tbsp of toasted sesame seeds (sesame salt) to enhance the nutty flavor. (It turns out most of the seasoning ingredients ended up being 1/2 Tbsp! ^^)

Add the drained Dohnanmul to the prepared seasonings. Gently toss and mix with your hands, being careful not to crush the delicate greens. Mix softly to ensure the dressing is evenly distributed.

Ta-da! Your fresh and flavorful Dohnanmul salad is ready. Its refreshingly tangy and slightly sweet taste is perfect for whetting your appetite, making it a must-try spring delicacy! It’s wonderful as a side dish with rice or even as lettuce wraps.!!
