Main Ingredients- 100g wild chives (dollae)
- 1 Tbsp vinegar (for washing)
Seasoning Ingredients- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp maesilcheong (plum extract)
- 1 Tbsp guk-ganjang (soup soy sauce)
- 1 Tbsp tuna extract
- 1 Tbsp toasted sesame seeds, ground
- 1 Tbsp vinegar
- 0.5 Tbsp sugar
- 1 Tbsp gochugaru (Korean chili flakes)
- 1 Tbsp maesilcheong (plum extract)
- 1 Tbsp guk-ganjang (soup soy sauce)
- 1 Tbsp tuna extract
- 1 Tbsp toasted sesame seeds, ground
- 1 Tbsp vinegar
- 0.5 Tbsp sugar
Cooking Instructions
Step 1
Let’s start by carefully preparing the fresh wild chives. The ones from our garden had wonderfully thick roots and were very fresh. Gently peel off the outer skin from the bulbous root ends of the wild chives. Then, carefully trim away the dark root tip. Next, fill a bowl with plenty of water and add 1 tablespoon of vinegar. Soak the wild chives in this vinegar solution for about 1 minute. After soaking, rinse them gently under running water, swishing them softly. This helps to remove any dirt or impurities effectively. Make sure to drain them well.
Step 2
Now, let’s prepare the delicious seasoning for our wild chive salad. In a bowl, combine 1 tablespoon of gochugaru, 1 tablespoon of maesilcheong, 1 tablespoon of guk-ganjang, 1 tablespoon of tuna extract, 1 tablespoon of ground toasted sesame seeds, 1 tablespoon of vinegar, and 0.5 tablespoon of sugar. Mix everything thoroughly until well combined. Ensure there are no clumps of seasoning and stir gently.

Cut the prepared wild chives into approximately 5cm lengths. Cutting them to a manageable size ensures they are easy to eat and that the seasoning distributes evenly. Add the prepared seasoning mixture to the cut wild chives. Gently toss them together, being careful not to crush the delicate chives.
