Cooking Instructions

Step 1

First, wash the fresh spring cabbage thoroughly under running water to remove any dirt or debris. If the leaves are large, chop them into bite-sized pieces (about 3-4 cm). Ensure you drain the cabbage well; excess water will dilute the dressing and make the salad soggy. You can let it drain in a colander or gently pat it dry with paper towels.

Step 2

Next, core the apple and slice it into thin julienne strips. Wash the red chili pepper, remove the seeds, and slice it thinly on a diagonal to add a pop of color.

In a large bowl, combine the prepared spring cabbage, julienned apple, and sliced red chili pepper. Add the seasoning ingredients: 2 Tbsp gochugaru, 2 Tbsp fish sauce, 1 Tbsp minced garlic, 1 Tbsp sugar, and 1 Tbsp oligodang. Gently toss everything together to coat the ingredients evenly with the seasoning. Be careful not to overmix or squeeze the cabbage, as this can make it mushy.
