Hot Pot Ingredients

  • King Oyster Mushrooms 4 large
  • Enoki Mushrooms 1 pack
  • Onion 1/2 medium
  • Chives (Naengi) 1/2 pack
  • Scallions 3 stalks
  • Tofu 1/2 block

Vegetable Broth Ingredients

  • Water 1L
  • SamPyo Vegetable Broth 2 packs
  • Minced Garlic 1 tsp

Cooking Instructions

First, let’s prepare the vegetables for the hot pot. Trim the ends off the king oyster mushrooms and enoki mushrooms, then either shred or slice them into bite-sized pieces. Peel the onion and cut it into thick julienne strips. The enoki mushrooms can simply be pulled apart by hand.

Clean the chives (naengi) thoroughly to remove any soil, trim off any tough ends, and cut them into similar lengths. Chop the scallions. We’re using scallions, so there’s no need to add green onions (daepah).

Now, it’s time to artfully arrange the prepared vegetables in the hot pot. Place the king oyster mushrooms, onions, and enoki mushrooms around the edges of the pot. In the center, arrange the cleaned chives and tofu neatly.

Next, generously add the star ingredient: the dumplings! Using pre-made spicy kimchi mandu will result in an even more satisfying and delicious Mandu Jeongol. Plenty of dumplings are key to a rich hot pot flavor.

Now for the flavorful broth. In 1 liter of water, dissolve 2 packs of SamPyo vegetable broth. Bring it to a rolling boil over high heat. Once boiling, add 1 teaspoon of minced garlic for extra aroma. Taste the broth and if it needs a little more seasoning, add a tiny pinch of salt or soy sauce. However, SamPyo vegetable broth often has enough salt, so you might not need any additional seasoning.

Carefully pour the boiling broth over the arranged ingredients in the hot pot. Once the broth is added, let everything simmer until all the ingredients are thoroughly cooked. For an extra layer of flavor, you can sprinkle in a little black pepper.

Voila! Your warm and hearty Mandu Jeongol is ready. This is a super simple meal that you can quickly put together using ingredients you already have, perfect for any occasion. Simple side dishes like radish kimchi (seokbakji), pickled scallions (daepah kimchi), and napa cabbage kimchi are all you need. You won’t even need a separate dipping sauce, as the natural flavors of the Mandu Jeongol are delicious on their own!
