Spring Aroma Filled! Altoran-Style Wild Chive Kimchi
Make Altoran-Style Wild Chive Kimchi with Seasonal Wild Chives, Kimchi Seasoning Can Be Used Elsewhere!
As the wild chives are at their peak season, I’ve made kimchi to capture their flavor. Let’s make delicious wild chives using the Altoran wild chive kimchi seasoning! This seasoning can also be used for other types of kimchi.
Main Ingredients- 1 generous bunch of fresh wild chives
- 1/2 radish (julienned)
- 1 onion (julienned)
Altoran Seasoning Ingredients- 1 grated apple
- 3 Tbsp chili powder
- 3 Tbsp anchovy sauce
- 2 Tbsp plum extract
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
The first step to making fragrant wild chive kimchi! First, wash the wild chives thoroughly under running water. It’s important to rinse them meticulously to ensure no soil or debris remains. Next, thinly julienne the radish and thinly julienne the onion as well. These julienned vegetables will add a crisp texture to the kimchi.
Step 2
The key to delicious kimchi is the seasoning! This recipe uses sweet fruits to add umami. Peel, core, and finely grate the apple. (If you have Korean pear, grating it with the apple will make it even better.) Now, in a bowl, add the grated apple (about 1 apple’s worth), then mix in 3 Tbsp of chili powder, 3 Tbsp of anchovy sauce for a savory flavor, 2 Tbsp of sweet plum extract, and 1 Tbsp of minced garlic for a pungent kick. This seasoning is delicious even without making a flour paste, and finally, add 1 Tbsp of sesame seeds for nuttiness and mix well to complete the Altoran-style seasoning.
Step 3
Now it’s time to combine all the ingredients and mix! Trim the prepared wild chives into bite-sized pieces (about 2-3 cm long) and cut them with scissors. Cutting them too small can affect the texture, so aim for a moderate size. Place the trimmed wild chives, julienned radish, and onion in a large bowl. Pour all of the pre-made Altoran-style seasoning over them. Gently mix with your hands, ensuring the seasoning is evenly distributed. Be careful not to knead too forcefully, as this can mush the wild chives.

Your wild chive kimchi, filled with the fragrant taste of spring, is finally complete! The pungent wild chives, crisp radish, and sweet seasoning come together to create a delicious kimchi that whets your appetite.
