Main Ingredients

  • 1 bunch of fresh wild chives (approx. 100g)
  • 2 Korean green chili peppers (add more if you like it spicier)

Seasoning

  • 1/2 Tbsp minced garlic (optional, adjust to taste)
  • 2 Tbsp red chili powder (for color and flavor)
  • 10 Tbsp soy sauce (adjust to your preference)
  • 5 Tbsp plum extract or corn syrup (for sweetness and umami)
  • 2 Tbsp sesame oil (for nutty aroma)
  • 1.5 Tbsp toasted sesame seeds or crushed sesame seeds (for a final nutty touch)

Cooking Instructions

Step 1

Prepare the wild chives meticulously. Gently scrape off any dirt or tough outer skins from the bulbous root part using a knife. Trim off any brown ends of the white roots and any yellowed or wilted leaves from the green stalks. Afterward, rinse the wild chives thoroughly under cold running water multiple times to ensure all soil is removed.

Step 1

Step 2

Once the wild chives are drained, place them on a cutting board and chop them into small pieces, about 0.5 cm in length. Avoid chopping them too finely; leaving some texture will enhance the dish. Transfer the chopped chives into a clean bowl. Finely mince the Korean green chili peppers and add them to the bowl. The added spiciness will make the sauce even more delicious.

Step 2

Step 3

Add 1/2 tablespoon of minced garlic to the bowl containing the wild chives and chili peppers. If you prefer a milder garlic flavor, you can reduce the amount or omit it altogether.

Step 3

Step 4

Sprinkle in 2 tablespoons of red chili powder. You can adjust the amount of chili powder based on your preference for color and heat.

Step 4

Step 5

Pour in 10 tablespoons of soy sauce. Using soup soy sauce will give a deeper flavor, while regular soy sauce offers a cleaner taste. Feel free to adjust the quantity to your liking.

Step 5

Step 6

Add 5 tablespoons of plum extract or corn syrup for a touch of sweetness and savory depth. If plum extract isn’t available, you can substitute it with sugar or corn syrup to control the sweetness level.

Step 6

Step 7

Generously drizzle in 2 tablespoons of sesame oil to impart a rich, nutty aroma. The fragrance of the sesame oil will beautifully complement the flavor of the wild chives.

Step 7

Step 8

Finally, add 1.5 tablespoons of toasted or crushed sesame seeds. Gently mix all the ingredients together with a spatula or spoon until well combined. It’s important to mix lightly to avoid bruising the delicate wild chives. Your delicious wild chive seasoning sauce is now ready!

Step 8

Step 9

Transfer the finished wild chive seasoning sauce into a small, attractive dish or bowl. This sauce is perfect for spooning over warm rice for a delightful meal, or serve it alongside various seasoned vegetables and bibimbap to truly savor the taste of spring.
