Plain Finger Cookie Ingredients- 150g Cake Flour (low-gluten flour)
- 70g Unsalted Butter (at room temperature)
- 50g Powdered Sugar
- 1 Egg Yolk
- A pinch of Salt
Green Finger Cookie Ingredients- 150g Cake Flour (low-gluten flour)
- 70g Unsalted Butter (at room temperature)
- 50g Powdered Sugar

- 4 Tbsp Matcha Powder
- A pinch of Salt

Cooking Instructions
Step 1
First, let’s make the ‘Plain Finger Cookie’ dough. Cream the butter using a whisk until it’s soft and smooth.
Step 2
Add the powdered sugar, egg yolk, and salt. Whisk everything together until well combined.
Step 3
Sift the cake flour (sifted twice for best results) into the mixture. Use a spatula to gently fold it in until just combined. Be careful not to overmix, as this can make the cookies tough.
Step 4
Once the dough comes together into a ball, wrap it in plastic wrap, flatten it slightly, and refrigerate for about 1 hour to rest. This chilling step makes the dough much easier to handle.
Step 5
Now, we’ll prepare the ‘Green Finger Cookie’ dough. Just like before, start by creaming the softened butter until smooth.

Incorporate the powdered sugar, egg yolk, and salt, mixing until evenly blended.
Step 7
Sift the cake flour and matcha powder together directly into the bowl. Gently fold them into the wet ingredients with a spatula until no dry flour remains. Again, avoid overmixing.

Gather the dough into a ball, wrap it in plastic, and refrigerate for 1 hour, just like the plain dough.
Step 9
Take out both chilled doughs. Divide them into portions and shape each into a finger. Try making the tip slightly thinner and add subtle creases for the knuckles to make them look more realistic.
Step 10
Gently press a slice of almond onto the tip of each cookie to resemble a fingernail. Bake in a preheated oven at 170°C (340°F) for about 15 minutes, or until lightly golden. Baking time may vary depending on your oven.
Step 11
Once baked, carefully remove the almond ‘fingernails’. Apply a generous amount of strawberry jam to the tip where the nail was. Then, reattach the almond. Your eerily realistic and fun finger cookies are now complete!
