Essential Ingredients- Spinach, 60g (washed and prepared)
- Shrimp, 6 pieces (peeled and deveined)
- Onion, 1/2 (thinly sliced)
- King Oyster Mushroom, 1/2 (thinly sliced)
- Garlic, 1 clove (minced or thinly sliced)
- Eggs, 5 large
- Heavy Cream, 3 Tbsp
- Grated Parmesan Cheese, 15g
- Shredded Mozzarella Cheese, 50g
- Butter, 1 Tbsp
- Olive Oil, as needed
- Salt, to taste
- Black Pepper, to taste
Cooking Instructions
Step 1
Begin by preparing the aromatics. Finely slice the onion into thin strips. Mince the garlic clove or slice it thinly, depending on your preference. Half an onion should suffice.
Step 2
Wash the fresh spinach thoroughly and chop the leaves in half. Thinly slice the king oyster mushroom. Slicing them thinly will ensure they cook evenly.
Step 3
Now, let’s build the flavor base. Heat the olive oil and butter in a skillet over medium heat. Once the butter is melted, add the sliced garlic and onions. Sauté until the onions become translucent and soft, about 3-5 minutes. Be careful not to burn the garlic.
Step 4
Once the onions are softened, add the prepared shrimp to the skillet and cook until they turn pink and are cooked through. Then, add the spinach and sliced king oyster mushrooms. Stir-fry quickly over medium-high heat until the spinach wilts. Season lightly with salt and pepper. Avoid overcooking the vegetables.
Step 5
In a separate bowl, whisk together the 5 large eggs, 3 tablespoons of heavy cream, and 15g of grated Parmesan cheese until well combined. Don’t over-whisk; a gentle mix is perfect.
Step 6
Lightly grease an oven-safe dish with olive oil. Spread the sautéed vegetable and shrimp mixture evenly at the bottom of the dish. Sprinkle the shredded mozzarella cheese generously over the mixture. Finally, pour the egg and cream mixture evenly over the top.
Step 7
Bake in a preheated oven at 175°C (350°F) for approximately 15-20 minutes, or until the top is golden brown and set. The cooking time may vary depending on your oven. Serve warm for the best experience.
