Cooking Instructions
Step 1
First, prepare 1L of broth, which is the foundation for a delicious stew. You can make your own anchovy-kelp broth or use a convenient teabag broth for a deep flavor. Using rice water will also give a nice savory taste.

Carefully trim the roots of the fresh spinach and rinse it thoroughly under running water several times to remove any dirt. This ensures a clean and pleasant taste.

To add sweetness and a refreshing flavor to the stew, thinly slice half of the onion into about 0.5cm thick strips. Slicing them too thinly might cause them to break down too much during cooking.

Now, let’s start cooking the stew! Heat a pot over medium heat. Add 1 Tbsp of doenjang and dissolve it in the broth or water, stirring gently. It’s important to make sure the doenjang is fully dissolved without clumps.

Once the doenjang is mostly dissolved, add 1/2 Tbsp of gochujang for a touch of spice and deeper flavor, and stir it in. The balanced ratio of doenjang and gochujang will make the broth wonderfully rich.
