Main Ingredients- 1 bunch spinach (approx. 200g)
- 4 Tbsp dried shrimp
- 1/2 block firm tofu
- 1.2L anchovy broth
- 2 Tbsp miso paste
- 1 Tbsp minced garlic
- 1 Tbsp fish sauce or tuna extract
- Pinch of red pepper flakes (optional)
Cooking Instructions
Step 1
Prepare the spinach. Remove any yellowed or wilted leaves, trim the root ends, and cut the spinach into manageable lengths, about 2-3 strands thick.

Wash the prepared spinach thoroughly under running water. This helps to remove any soil or grit. Rinse it several times until clean. Drain the spinach well in a colander.

To enhance the soup’s savory flavor, lightly toast the dried shrimp. Heat a dry skillet over low heat, add the 4 tablespoons of dried shrimp, and toast gently for a minute or two until fragrant, being careful not to burn them. Let them cool slightly. This step removes any fishy smell and brings out a nutty aroma.

Cut the half block of tofu into bite-sized pieces, approximately 1.5 to 2 cm cubes.

Bring 1.2 liters of anchovy broth to a boil in a pot. Once the broth is boiling vigorously, add the 2 tablespoons of miso paste through a fine-mesh sieve. Stir gently to dissolve the miso evenly into the broth, ensuring a smooth consistency.

When the miso broth returns to a simmer, add the prepared spinach and cook for a minute or two until it wilts. Then, add the toasted dried shrimp, 1 tablespoon of minced garlic, and 1 tablespoon of fish sauce or tuna extract. For a hint of spice, you can add a pinch of red pepper flakes now.

Taste the soup and adjust seasoning if necessary. Add the cubed tofu. Bring the soup back to a simmer, then reduce the heat to medium and let it cook for about 10 minutes. Be gentle so the tofu doesn’t break apart.
