The weather is getting cooler in the mornings and evenings, making us crave a warm, comforting stew. Here’s a recipe for a delicious Gochujang stew packed with zucchini, spam, and potatoes that will have you finishing your rice in no time! It’s a great side dish for meals and satisfying enough for camping trips!

Main Ingredients
  • 200g Spam (cut into bite-sized pieces)
  • 2-3 Potatoes (peeled and diced)
  • 1/2 Onion (sliced or diced)
  • 1/2 Zucchini (sliced into half-moons or diced)
  • 1 Stalk Green Onion (sliced diagonally)
  • 2 Korean Green Chili Peppers (sliced diagonally, adjust to spice preference)
  • 1 Tbsp Minced Garlic
  • 600ml Broth (anchovy-kelp broth or rice water)

Seasoning
  • 2 Tbsp Beomil Gochujang (or homemade gochujang)
  • 1 Tbsp Gochugaru (Korean chili flakes, adjust to spice preference)
  • 1 Tbsp Fish Sauce (or soy sauce)
  • 1 Tbsp Soy Sauce

Cooking Instructions

Step 1

First, let’s make the delicious seasoning paste for our stew. In a bowl, combine 2 Tbsp of Beomil Gochujang, 1 Tbsp of Gochugaru, 1 Tbsp of fish sauce, and 1 Tbsp of soy sauce. Mix them well to create the paste. Making the paste in advance helps the flavors meld beautifully into the stew.

Step 2

Now, let’s stir-fry. Lightly oil a pot or deep pan. Add the minced garlic, diagonally sliced green onion, sliced onion, and diced potatoes. Sauté over medium heat until the onions become translucent. Then, add the pre-made seasoning paste and stir-fry for another 1-2 minutes, being careful not to burn it, to bring out the aroma of the seasonings.

Step 3

Be careful not to burn the paste. Pour in 600ml of the prepared broth. Bring it to a boil over high heat, then reduce the heat to medium-low and simmer for about 10-15 minutes, or until the potatoes are tender. Skim off any foam that rises to the surface for a cleaner taste.

Step 4

Once the potatoes are mostly cooked, add the sliced zucchini, spam, and diagonally sliced Korean green chili peppers. Cover the pot and continue to simmer for another 5-7 minutes until all ingredients are tender. Taste the stew and adjust seasoning with salt or soy sauce if needed. Enjoy this hearty and flavorful stew with a bowl of hot rice!
