Introducing the garlic scape salad recipe from Sumine Banchan! This is a fantastic side dish or pantry staple that’s incredibly easy to make with minimal seasoning. Using just gochujang (Korean chili paste), chili powder, and soy sauce, you can create a delicious spicy and zesty garlic scape salad. It’s perfect for mixing with rice or enjoying with crispy rice. Its crunchy texture and appetite-stimulating flavor will be a hit with the whole family!
Main Ingredients- 1 bunch garlic scapes (approx. 200g)
- 1 Tbsp toasted sesame seeds
- 1 tsp sesame oil
Cooking Instructions
Step 1
First, wash the garlic scapes thoroughly and drain them well on a colander. Trim off the tough, woody ends, as they can be bitter. If you don’t want to discard them, save them for other dishes like cucumber salad.
Step 2
Cut the trimmed garlic scapes into bite-sized pieces, about 4-5 cm (around 2 inches) long. This length is easy to eat and looks appealing.
Step 3
Place all the cut garlic scapes into a large mixing bowl. From this point on, it’s just a matter of adding the seasonings and mixing – a truly simple process.
Step 4
Sprinkle the prepared seasoning ingredients over the garlic scapes: 2 Tbsp gochujang, 1 Tbsp gochugaru, 2 Tbsp soy sauce, and 2 Tbsp sugar.
Step 5
Now, gently mix everything together with your hands until the scapes are well coated. Be careful not to break the scapes. Finally, add 1 Tbsp of toasted sesame seeds and 1 tsp of sesame oil for a nutty aroma, and give it one last gentle mix. Your delicious garlic scape salad is ready! Isn’t it incredibly easy?
Step 6
Here you have it – the Sumine Banchan-style garlic scape salad, featuring the delightful crunch of the scapes and a perfectly balanced spicy and sweet seasoning. It’s the ultimate side dish, so be sure to give it a try!
