Main Ingredients

  • 1 serving of somen or udon noodles (approx. 100g)
  • 1 can of spicy tuna (150g)
  • 1/4 cucumber, thinly julienned
  • 2-3 stalks of green onion, finely chopped
  • A sprinkle of sesame seeds

Spicy Sauce Ingredients

  • 1 Tbsp sugar
  • 1 Tbsp soy sauce
  • 1 Tbsp vinegar
  • 1 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp sesame oil
  • 1 Tbsp sesame seeds

Cooking Instructions

Step 1

First, prepare one serving of noodles (about 100g). Bring a generous pot of water to a boil and add the noodles. Gently loosen them with chopsticks as they cook, and boil for about 3 minutes. (Using medium-thick noodles, ‘jungmyeon’, will give a chewier texture.)

Once the noodles are cooked, immediately transfer them to cold water. Rub them gently under running cold water to wash off the excess starch. Rinsing thoroughly in cold water will ensure the noodles remain firm and chewy.

Now, let’s make the delicious sauce! In a small bowl, combine 1 Tbsp sugar, 1 Tbsp soy sauce, 1 Tbsp vinegar, 1 Tbsp gochujang, 1 Tbsp sesame oil, and 1 Tbsp sesame seeds. Stir well with a spoon until the sugar dissolves, completing your sauce.

Add the prepared sauce to the drained, cooked noodles and gently mix them together with your hands. Since you’ll be adding spicy tuna, it’s best to season the sauce slightly less salty at this stage. This prevents the dish from becoming too salty later.

Open one can of spicy tuna and pour its contents, including the oil, directly over the sauced noodles. The tuna oil adds wonderful flavor, so don’t discard it! Gently mix with chopsticks to combine the tuna with the noodles.
