Hello everyone! Today, we’re making a delicious and popular dish: Tofu Kimchi. To add a special touch, we’re using tuna instead of the usual meat in the kimchi stir-fry. If you love meat, feel free to add some, or if you prefer a simpler version, just stir-fry the kimchi and seasonings. This dish is wonderfully spicy and flavorful, making it perfect as a side dish with rice or as a delightful accompaniment to drinks. Let’s get started on how to make this easy and delicious Tuna Tofu Kimchi!

Main Ingredients

  • 1 block (approx. 300g) Tofu
  • 6 leaves (approx. 200g) Napa Cabbage Kimchi
  • 1/2 medium Onion
  • 150g canned Tuna (drained of most oil)

First, prepare half an onion. Wash it thoroughly under running water, pat it dry, and then thinly slice it into strips about 0.5 cm thick. If you slice it too thin, it might become mushy when stir-fried.

For a flavorful stir-fry, prepare about 6 leaves of napa cabbage kimchi. Wash the kimchi and cut it into bite-sized pieces, about 2-3 cm in size. Using slightly aged or sour kimchi will give a richer flavor.

Prepare a 150g can of tuna. Open the can and drain most of the oil, but leave a little behind. Draining all the oil can make the tuna dry, so retaining a small amount helps with moisture and flavor.

Now, grab a frying pan and add the chopped kimchi and the sliced onion. Stir-frying the onion with the kimchi helps prevent the kimchi from burning and adds a subtle sweetness.

Add the seasoning ingredients for the kimchi stir-fry. Mix in 1.5 Tbsp of gochugaru, 1 Tbsp of sugar, and 1 Tbsp of soy sauce. Stir-fry over medium-high heat initially, then reduce to medium and cook for about 3-4 minutes, until the onions become translucent and the kimchi softens.

Once the kimchi and onions are partially cooked, add the prepared tuna and 2 Tbsp of mirin (rice wine). Stir well to combine everything. Continue to stir-fry over medium-low heat for 1-2 minutes. Mirin helps to remove any unwanted fishy odors and adds a nice sheen.

Turn off the heat. Drizzle about 1 tsp of sesame oil around the edges of the pan. Give it a quick mix; the fragrant sesame oil will enhance the overall aroma of the dish, completing the stir-fried mixture.

Now, let’s prepare the main star: the tofu. We’re using a 300g block of tofu. Open the package and gently press out excess water. Pressing the tofu before cutting helps it hold its shape better.

In a pot, add enough water to cover the tofu. Sprinkle in about three pinches of salt. Bring the water to a rolling boil, then carefully add the tofu. Let it boil for about 1 minute. This step firms up the tofu and removes any raw taste.

Cut the blanched tofu into bite-sized pieces. Avoid making them too large, as they can be difficult to eat, and too small, as they might break apart easily. Aim for pieces that are comfortable to pick up.

Transfer the prepared tuna and kimchi stir-fry onto a nice serving plate. Mound it up attractively in the center – this will be the focal point of your dish.
