This Kimchi Bibim Guksu (Spicy Mixed Noodles) is perfect for whetting your appetite with its delightfully sour, spicy, and sweet flavors. Using well-fermented kimchi, you can easily create this satisfying noodle dish, making it an excellent choice for a quick lunch or dinner. The chewy somyeon noodles, crisp kimchi, and fragrant perilla leaves combine for a rich and delicious experience.

  • Somen noodles 2 servings (approx. 200g)
  • Perilla leaves 5-7 leaves

Cooking Instructions

Rinse the aged kimchi lightly under water to reduce its tartness and squeeze out excess moisture thoroughly. If the kimchi pieces are too large, chop them into bite-sized pieces. (Rinsing the kimchi slightly mellows its strong flavor, leading to a cleaner tasting sauce.)

In a small bowl, combine all the sauce ingredients: gochujang, kimchi juice, maesilcheong, pear extract, vinegar, oligodang, minced garlic, and gochugaru. Mix well to create the bibim guksu sauce. The key here is the balance of spicy, sour, and sweet flavors, so feel free to adjust the quantities to your preference.

Wash the perilla leaves, pat them dry, and then thinly slice them into fine strips. The aromatic quality of the perilla leaves will greatly enhance the overall flavor of your noodles.

Bring a large pot of water to a rolling boil. Add the somen noodles and cook. When the noodles rise to the surface, add about half a cup of cold water to the pot. Repeat this process of adding cold water 2-3 times. This technique helps to make the noodles chewier and more resilient. Once the noodles are translucent and cooked through, drain them immediately and rinse thoroughly under cold running water to remove excess starch. Drain well. (Rinsing in cold water prevents the noodles from becoming mushy and maintains their chewy texture.)

In a large mixing bowl, place the drained somen noodles. Add half of the chopped kimchi, half of the thinly sliced perilla leaves, and about two-thirds of the prepared bibim guksu sauce. Gently mix everything together with your hands, ensuring the sauce coats the noodles evenly.

Transfer the mixed noodles to a serving bowl. Top with the remaining chopped kimchi and sliced perilla leaves. Drizzle with any remaining sauce as needed. Finish by drizzling with sesame oil and perilla oil (if using), and sprinkle with toasted sesame seeds for a beautiful presentation and an irresistible aroma.
