Main Ingredients- 1 Cucumber
- 0.5 Tbsp Coarse Salt (for salting cucumber)
Spicy & Sweet Dressing- 2 Tbsp La Jao Jang
- 0.5 Tbsp Sugar
- 1 Tbsp Soy Sauce
- 2 Tbsp Vinegar
- 1 Tbsp Sesame Oil
- 2 Tbsp La Jao Jang
- 0.5 Tbsp Sugar
- 1 Tbsp Soy Sauce
- 2 Tbsp Vinegar
- 1 Tbsp Sesame Oil
Cooking Instructions
Step 1
Wash one fresh cucumber thoroughly and prepare it. Slice the cucumber about 0.5 cm thick. Add 0.5 Tbsp of coarse salt and let it sit for about 30 minutes to soften slightly while maintaining its crispness. Stirring it once halfway through will help it salt evenly.
Step 2
After salting, squeeze out as much water as possible from the cucumbers by hand without rinsing them under running water. This step is crucial for keeping the cucumber crisp and allowing it to absorb the dressing well.
Step 3
In a bowl, combine all the dressing ingredients: 2 Tbsp La Jao Jang, 0.5 Tbsp Sugar, 1 Tbsp Soy Sauce, 2 Tbsp Vinegar, and 1 Tbsp Sesame Oil. Whisk them together to create a delicious dressing. (This measurement is for 1 cucumber.)
Step 4
Add the squeezed cucumbers to the bowl with the prepared dressing. Be gentle when adding them to avoid breaking the cucumber slices.
Step 5
Gently mix the cucumbers with the dressing until evenly coated. Be careful not to overmix, as this can make the cucumbers mushy. You can enjoy it immediately, or chill it in the refrigerator for an even more refreshing taste.
