  • 200g well-fermented kimchi (sour kimchi recommended)
  • 10 peppers (e.g., jalapeños or red chilies, adjust to your spice preference)
  • 100g pork (cooked shredded pork or ground pork)
  • 1/2 medium onion
  • 2 eggs
  • 50g pancake mix (buchim garu)
  • 3 Tbsp cooking oil

First, let’s prepare the star of our Kimchi Donggeurangttaeng: the kimchi! Using well-fermented kimchi (like aged kimchi) will give a deeper, more satisfying flavor. We’ll also need some peppers and onion, which are usually on hand. If you have leftover cooked pork (like boiled pork belly), finely chop it to use in place of ground pork. This makes the preparation much simpler and uses up what you have. (Traditionally, ground pork is used, but using what’s available is part of the fun!)

Finely chop the prepared kimchi, peppers, onion, and the leftover cooked pork (or ground pork). You can use a food processor or blender for a quick chop, but a sharp knife works perfectly well too. Once all the ingredients are finely chopped, crack the two eggs into the mixture and get ready to mix everything together.

With all the ingredients and eggs combined, it’s time to add the pancake mix. Mix everything thoroughly until a cohesive dough forms. If the mixture feels too stiff, gradually add a little kimchi juice or water until it reaches a soft, workable consistency. The dough should be easy to shape. Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Scoop spoonfuls of the mixture and drop them into the hot oil, shaping them into small, flat patties.
