Main Ingredients
  • 1 serving fresh noodles or somen (approx. 100-150g)
  • 3 leaves well-fermented aged kimchi (approx. 100g)
  • 1/5 onion (approx. 30g)
  • 1/2 Korean cucumber (optional)
  • 1/2 Cheongyang chili pepper (adjust to spice preference)
  • 1/2 cup commercial cold noodle broth (approx. 100ml, optional)

Seasoning Ingredients
  • 2 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Sugar
  • 1 Tbsp Maesilcheong (Plum extract syrup, or corn syrup)
  • 0.5 Tbsp Soy Sauce
  • 1 Tbsp Double-concentrated Vinegar (use 2 Tbsp regular vinegar)
  • 1 tsp Sesame Oil
  • A pinch of toasted sesame seeds or ground sesame

Cooking Instructions

Step 1

First, prepare the complementary ingredients. Thinly slice the onion after peeling. Finely chop the Korean cucumber and Cheongyang chili pepper. Add more chili peppers if you prefer it spicier.

Step 2

Chop the aged kimchi into bite-sized pieces, about 1-2 cm wide. If the kimchi is too sour, you can lightly rinse it under water and squeeze out excess moisture.

Step 3

Now, let’s make the delicious seasoning sauce. In a bowl, combine 2 Tbsp Gochujang, 1 Tbsp Gochugaru, 1 Tbsp Sugar, 1 Tbsp Maesilcheong, 0.5 Tbsp Soy Sauce, and 1 Tbsp double-concentrated vinegar. Mix thoroughly. (If using regular vinegar, use 2 Tbsp.)

Step 4

Prepare your fresh noodles or somen. If using fresh noodles, gently shake off any excess flour coating.

Step 5

Bring a generous pot of water to a rolling boil. Add the noodles and once the water re-boils, add about 1/3 cup of cold water. Repeat this process 2-3 times while boiling the noodles for approximately 4 minutes total. (Adjust cooking time based on noodle type and thickness.) Immediately drain the noodles and rinse them under cold running water 2-3 times to remove excess starch, then drain thoroughly.

Step 6

In a large mixing bowl, add the drained noodles. Then, add the chopped kimchi, sliced onion, and chopped chili peppers. Pour in the prepared seasoning sauce as well.

Step 7

Gently mix everything together with your hands, ensuring the sauce coats the noodles and vegetables evenly. Finally, drizzle in 1 tsp of sesame oil and mix once more.

Step 8

Transfer the well-mixed bibim guksu to a serving bowl. Sprinkle with toasted sesame seeds or ground sesame for added aroma and flavor.

Step 9

For an extra refreshing touch, you can pour about 1/2 cup of commercial cold noodle broth over the noodles before mixing. Enjoy your delicious meal!
