A delightful noodle dish we make every weekend, this is our family’s special recipe that’s both refreshing and satisfying.
Main Ingredients
- 200g somyeon (thin wheat noodles)
- 1/2 head of well-fermented kimchi (approx. 300g)
- 1 tsp sesame oil
Cooking Instructions
Step 1
First, bring a generous amount of water to a rolling boil in a pot. Once boiling, add 200g of somyeon noodles and cook for 3-4 minutes. For a chewier texture, once the water re-boils, add about half a cup of cold water to firm up the noodles; repeat this cold water addition once or twice. After cooking, quickly rinse the noodles under cold running water to remove excess starch, then drain them thoroughly in a colander. Gently rubbing the noodles while rinsing helps make them even chewier.
Step 2
Place the well-drained somyeon noodles into a large bowl. To prevent the noodles from clumping when you mix in the sauce later, it’s best to have them ready in the bowl.
Step 3
Wash the kimchi, drain it well, and then finely chop it. Cutting the kimchi thinly is important so the sauce coats it evenly and makes it easier to eat. Using well-fermented, slightly sour kimchi will yield the best flavor.
Step 4
Now, let’s prepare the delicious dressing. Add the chopped kimchi to the bowl with the noodles. Then, add 2 Tbsp soy sauce, 1 Tbsp gochugaru, 1 Tbsp oligosaccharide, and 1 tsp sesame oil for a nutty aroma.
Step 5
Once all ingredients are in the bowl, use your hands or chopsticks to thoroughly mix the noodles, kimchi, and dressing until everything is well combined. It’s crucial to mix it well so the flavors meld together. Taste the noodles and adjust the seasoning if needed – add more soy sauce if it’s not salty enough, or more oligosaccharide if you prefer it sweeter.
Step 6
Transfer the well-mixed Kimchi Bibim Guksu to a serving bowl. For an enhanced meal, consider topping it with a fried egg, sliced cucumber, or seaweed flakes according to your preference. Enjoy your delicious meal!
