Ingredients

  • 150g somyeon noodles (for 1 serving)
  • 150g kimchi juice (from aged or sour kimchi like napa or radish kimchi)
  • 1 Tbsp sugar
  • 1 Tbsp vinegar
  • 1 Tbsp sesame oil
  • 1/3 Tbsp minced garlic
  • A pinch of sesame seeds
  • A pinch of shredded roasted seaweed (optional)

Cooking Instructions

Step 1

First, let’s make the star of our dish: the seasoning sauce. In a bowl, add 150g of kimchi juice. Using juice from well-fermented, sour kimchi will give the best flavor. To this, add 1 Tbsp of sugar for a touch of sweetness, 1 Tbsp of vinegar for tanginess, 1 Tbsp of sesame oil for nutty aroma, and 1/3 Tbsp of minced garlic for depth of flavor. Whisk everything together with a spoon until well combined. Ensure the sugar is dissolved for a smooth sauce.

Step 1

Step 2

Now, it’s time to cook the noodles. Bring a large pot of water to a rolling boil. Add 150g of somyeon noodles and cook for about 7-9 minutes, or according to package directions, until al dente. Stir the noodles occasionally to prevent them from sticking together. Cook them slightly less if you prefer a chewier texture.

Step 2

Step 3

Once the noodles are cooked, drain them in a colander. Immediately rinse them thoroughly under cold running water. This step is crucial to remove excess starch, resulting in firm, springy noodles that aren’t mushy. Drain them well by shaking the colander vigorously.

Step 3

Step 4

Transfer the drained, cooled noodles to a mixing bowl. Pour the prepared kimchi seasoning sauce over the noodles. Using your hands or chopsticks, toss and mix everything together thoroughly. Ensure every strand of noodle is coated with the delicious sauce. Gently but firmly mix until well combined for the best flavor distribution.

Step 4

Step 5

Finally, plate your beautifully mixed bibim guksu. Garnish generously with a sprinkle of sesame seeds for added texture and nutty flavor, and top with shredded roasted seaweed for an extra layer of savory goodness. Your delicious and refreshing Kimchi Bibim Guksu is ready to be enjoyed!
