Spicy & Sweet Yeopdduk Fried Rice
Delicious Recipe Using Leftover Yeopdduk (Spicy Rice Cakes)
Don’t throw away your leftover Yeopdduk! This recipe creatively transforms it into a simple yet incredibly delicious fried rice. The signature spicy and sweet sauce of Yeopdduk perfectly coats the rice, creating a satisfying meal.
Main Ingredients
- Leftover Yeopdduk (spicy rice cakes) – about 2 ladles worth
- Warm cooked rice – 2 bowls
- Pickled radish (Danmuji) – 3 pieces (approx. 50g)
- Seasoned seaweed snack (Japchae Gim) – 1 pack
Cooking Instructions
Step 1
First, prepare your leftover Yeopdduk. We’ll be using the rice cakes, sauce, and any other toppings.
Step 2
Using scissors or a knife, cut the rice cakes from the Yeopdduk into bite-sized pieces (about 1-1.5cm). Cutting them smaller helps them mix better with the rice.
Step 3
Rinse the pickled radish (Danmuji) lightly, pat it dry, and finely mince it to a similar size as the cut rice cakes. The sweet and sour flavor of the Danmuji will add a refreshing touch to the fried rice.
Step 4
In a large bowl, place the 2 bowls of warm cooked rice. Add the prepared Yeopdduk and minced Danmuji. Gently mix everything together with a spatula or spoon, ensuring the rice grains are not clumped.
Step 5
Heat a pan over medium-low heat and add a little cooking oil. Add the rice mixture and stir-fry for about 3-4 minutes, until the rice grains are slightly separated and everything is well combined.
Step 6
Once the rice is partially fried, add the seasoned seaweed snack (Japchae Gim). You can either crush it slightly before adding or add the whole pack and break it up in the pan. The savory notes from the seaweed will enhance the overall flavor.
Step 7
Finally, drizzle in 2 Tbsp of sesame oil for a nutty aroma and give it one last gentle stir to combine everything. Your delicious fried rice is ready!
Step 8
Your spicy and sweet Yeopdduk fried rice is complete! Serve it nicely in a bowl and enjoy.
Step 9
The Yeopdduk itself is already well-seasoned, so you won’t need to add any extra salt or seasoning. It’s delicious as is! For an extra treat, you can top it with a fried egg.
