  • 1 can (approx. 150g) whelks
  • 1 cucumber
  • 1/2 onion
  • 1 handful of cabbage
  • A little bit of carrot

Step 1

Today, we’re going to make a deliciously spicy and sweet Golbaengi Somen Muchim. Follow this recipe, and you can enjoy a restaurant-quality taste right at home!

First, let’s prepare the vegetables. Wash the cucumber, remove the seeds, and julienne it thinly. Thinly julienne the onion, cabbage, and carrot as well. Cutting them thinly helps the sauce penetrate better. Open the canned whelks and drain the liquid, but reserve a couple of tablespoons of the whelk brine to use in the sauce. If the whelks are too large, cut them in half into bite-sized pieces. In a large bowl, add all the prepared vegetables (cucumber, onion, cabbage, carrot). Add all the seasoning ingredients: Gochujang (2 Tbsp), Gochugaru (1 Tbsp), sugar (1 Tbsp), vinegar (2 Tbsp), and sesame seeds. Now, add about 2-3 tablespoons of the reserved whelk brine and the whelks. Gently mix everything together with your hands, like you’re ‘jomal-jomal’ (gently massaging) it, until well combined. Be careful not to mash the whelks.

Boil the somen noodles in plenty of water until they are perfectly al dente (chewy and firm). Stir occasionally to prevent them from sticking. Once cooked, rinse the noodles under cold water to drain thoroughly. Make sure to get rid of excess water, as this will help the sauce adhere better to the noodles.

Now, all that’s left is to serve the delicious whelk and vegetable mixture over the cooked somen noodles! You can mix it all together at once, or serve the Golbaengi Muchim on top of the noodles and mix it as you eat. This way, you get to enjoy the fresh taste each time.
