I was planning to make some jeon (Korean pancakes), but then I thought a spicy and tangy bibim guksu (mixed noodles) would be a better match with the noodles than rice. So, here’s a super simple gochujang bibim guksu recipe! You can easily whip this up with basic ingredients you likely have at home. Feel free to use any leftover vegetables in your fridge! I used napa cabbage and cucumber, and of course, a soft-boiled egg is a must for bibim guksu. Shall we make this quick and easy bibim guksu that pairs wonderfully with our jeon?

Bibim Guksu Ingredients

  • 12 leaves Napa cabbage
  • 1/3 Cucumber
  • 3 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Guk-ganjang (Soup soy sauce) or Soy sauce
  • 2 Tbsp Brown rice vinegar
  • 1 Tbsp Sugar
  • 1 Tbsp Mirin (Rice wine)
  • 1 Tbsp Sesame oil
  • 1 tsp Toasted sesame seeds
  • 1.5 servings Somyeon (Thin wheat noodles)
  • 2 Soft-boiled eggs

For the Dipping Onion Soy Sauce

  • 1/2 Onion
  • 5 Tbsp Guk-ganjang (Soup soy sauce) or Soy sauce
  • 3 Tbsp Brown rice vinegar
  • 2 Tbsp Mirin (Rice wine)

Cooking Instructions

Step 1

First, thinly slice the 12 napa cabbage leaves you’ve washed thoroughly into bite-sized strips. This will add a delightful crunch. Also, take 1/3 of a cucumber, wash it, remove the seeds, and slice it into similar-sized strips.

For a rich flavor and smooth texture, prepare your soft-boiled eggs. Boil them until the yolk is jammy, then peel them and carefully slice each egg in half.

Now, let’s make the star of the show – the delicious bibim guksu sauce! In a bowl, combine 3 tablespoons of gochujang, 2 tablespoons of soup soy sauce, 2 tablespoons of brown rice vinegar, 1 tablespoon of sugar, and 1 tablespoon of mirin.

Using a spatula or spoon, stir the ingredients until the gochujang is completely dissolved and the sauce is smooth. Taste it and adjust the sugar or vinegar to your preference for the perfect sweet and tangy balance.

Add about two-thirds of the sliced napa cabbage to the sauce. Gently toss it with your hands, ensuring each piece is well-coated. This quick marination helps keep the cabbage wonderfully crisp.

Boil the somyeon noodles in plenty of water until al dente. Immediately rinse them under cold water to stop the cooking and drain well. Then, toss them with 1 tablespoon of sesame oil to prevent them from sticking together.

Add all the prepared bibim sauce to the sesame oil-coated noodles. Mix everything together thoroughly, ideally using your hands, until every strand of noodle is evenly coated with the delicious sauce. Gently massage the noodles to ensure the flavor penetrates.

Arrange the sauced noodles attractively in a serving bowl. Top generously with the remaining sliced napa cabbage and cucumber. Place the halved soft-boiled eggs on top, and finish with a sprinkle of 1 teaspoon of toasted sesame seeds. If the noodles seem a bit dry, add 1-2 ice cubes. As they melt, they’ll create a refreshing, moist broth, ensuring your bibim guksu stays perfectly seasoned until the last bite. Your delicious bibim guksu is ready!

The main reason for making this super simple bibim guksu was to enjoy it alongside our delicious jeon! We also prepared a complementary onion soy sauce for dipping. In a bowl, mix 5 tablespoons of soup soy sauce, 3 tablespoons of brown rice vinegar, and 2 tablespoons of mirin. Thinly slice half an onion and add it to the mixture. Let this sit in the refrigerator for about 1 hour to allow the onion’s flavor to infuse deeply, creating a wonderfully aromatic dipping sauce.
