This recipe allows you to enjoy delicious Bibim Guksu with minimal effort. The perfect blend of spicy and sweet sauce with crisp vegetables will awaken your appetite and make for a fantastic meal. ^^
Main Ingredients- 50g fresh lettuce mix (e.g., romaine, perilla leaves)
- 1/2 cucumber, crisp
- 100g kimchi, spicy (well-fermented kimchi recommended)
- 100g somen noodles (thin wheat flour noodles)
Cooking Instructions
Step 1
First, thoroughly wash and prepare your fresh vegetables. Chop the lettuce mix into bite-sized pieces. Finely chop the kimchi as well. The spiciness of the kimchi will enhance the flavor of your Bibim Guksu!

Wash the cucumber. You can lightly peel it with a peeler or knife for a softer texture, which is optional. Then, slice it into thin strips that are easy to eat. The crispness of the cucumber adds to the Bibim Guksu’s delightful texture.

Finely chop the well-fermented kimchi. It’s best to lightly squeeze out excess juice before chopping so it mixes well and is easy to eat. The type of kimchi you use will affect the final taste, so choose your favorite!

Now, let’s make the star of Bibim Guksu: the sauce! In a bowl, combine 2 Tbsp gochujang, 2 Tbsp soy sauce, 2 Tbsp oligodang (or corn syrup), 1/2 Tbsp minced garlic, 1 Tbsp sugar, and a pinch of salt. Mix everything thoroughly. Feel free to adjust the amount of oligodang or sugar to suit your preferred sweetness.
Step 5
Bring a generous pot of water to a rolling boil. Once boiling, add a pinch of salt and then add the somen noodles. Gently stir the noodles as they cook to prevent them from sticking together. Cook according to the package instructions, or test by taking out a strand to check for doneness. (Usually 3-4 minutes)

Immediately rinse the cooked somen noodles under cold running water. This step is crucial to remove excess starch and achieve a perfectly chewy texture. Drain them thoroughly in a colander. Any remaining water can make your Bibim Guksu taste diluted.

In a large bowl, combine the drained somen noodles, prepared lettuce mix, cucumber strips, and kimchi. Add the prepared sauce. Finally, drizzle generously with 2 Tbsp sesame oil and sprinkle with 1 Tbsp sesame seeds. Now, mix everything together with your hands until well combined.
