Introducing Sundae Stir-fried Noodles, made in a jiffy with sundae (Korean blood sausage) and bibimyeon (Korean spicy mixed noodles) from your fridge. It’s simple yet makes a fantastic meal or a great accompaniment to drinks!
Essential Ingredients- Sundae (Korean blood sausage) – 10 pieces (adjust to your preference)
- Bibimyeon (Korean spicy mixed noodles) – 1 pack
- Onion – 1/2 medium (sliced into strips)
- Cheongyang chili pepper – 1 (finely chopped for extra heat)
- Perilla leaves – 2 leaves (shredded lengthwise for aromatic flavor)
- Green onion – 15g (chopped for making scallion oil)
Sauce (Golden Ratio for Amazing Flavor)- Bibimyeon soup powder – 1 packet (for basic flavor)
- Gochujang (Korean chili paste) – 1 Tbsp (for spiciness and umami)
- Oligodang (corn syrup) – 1 Tbsp (for gloss and sweetness)
- Vinegar – 2 Tbsp (to cut through richness with tanginess)
- Bibimyeon soup powder – 1 packet (for basic flavor)
- Gochujang (Korean chili paste) – 1 Tbsp (for spiciness and umami)
- Oligodang (corn syrup) – 1 Tbsp (for gloss and sweetness)

Cooking Instructions
Step 1
First, let’s prepare the sauce, the key to these delicious stir-fried noodles! In a small bowl, combine 1 packet of bibimyeon soup powder, 1 Tbsp gochujang, 1 Tbsp oligodang, and 2 Tbsp vinegar. Whisk until the sweetener is fully dissolved. The sweet, sour, and spicy aroma is already making your mouth water!

Next, cooking the noodles! If your stove has only one burner, it’s a good idea to cook the noodles in advance, just like I do. This saves time as you can stir-fry other ingredients simultaneously. Of course, if you have more burners available, you can cook the noodles at the end while stir-frying.

If you’re cooking them beforehand, boil the noodles for about 1 minute, just enough to loosen them, so they don’t get too mushy when stir-fried. Once loosened, drain them immediately, rinse under cold water, and set aside. Make sure to drain them well to prevent excess water from diluting the sauce later.

Now, let’s start the stir-frying! Heat a pan with a little cooking oil over medium-low heat. Add the chopped green onions first and stir-fry them. The key is to gently cook the scallions to release their fragrant oil, creating a delicious base flavor.

Once the fragrant scallion oil has rendered, add the sliced onion and chopped Cheongyang chili pepper to the pan. Stir-fry them together until the onions become translucent and slightly sweet. Adding the chili pepper will provide a pleasant spicy kick.

When the onions are somewhat cooked, add the 10 pieces of sundae (Korean blood sausage), cut into bite-sized pieces, to the pan. Stir-fry everything together, ensuring the sundae is heated through. It’s best to stir-fry over medium heat rather than high heat to prevent the sundae from bursting.

Once the sundae is heated, add the drained bibimyeon noodles to the pan. Gently stir-fry to combine all the ingredients. Be careful not to break the noodles as you stir-fry.

After stir-frying the noodles and sundae for a bit, pour the prepared delicious sauce evenly over the ingredients in the pan. Reduce the heat slightly to prevent the sauce from burning, and quickly mix everything together to ensure the noodles are well-coated with the sauce.

Continue to stir-fry for another 1-2 minutes, allowing the sauce to cling to the noodles and sundae. It’s almost done!
