Main Ingredients- Large Squid, 3
- Onion, 1
- Green Onion (Scallion), 1 stalk
- Green Chili Pepper, 1
- Red Chili Pepper, 1
- Carrot, 1/3
- Minced Garlic, 1/2 Tbsp (for stir-frying)
Spicy & Sweet Sauce- Soy Sauce, 5 Tbsp
- Gochujang (Korean Chili Paste), 3 Tbsp
- Sugar, 1 Tbsp
- Oligosaccharide (or Corn Syrup), 1 Tbsp
- Cooking Wine (Mirin, etc.), 1 Tbsp
- Oyster Sauce, 1 Tbsp
- Minced Garlic, 1 Tbsp (for sauce)
- Gochugaru (Korean Chili Flakes), 4 Tbsp
- Sesame Oil, 1 Tbsp
- Toasted Sesame Seeds, 1 Tbsp
- Soy Sauce, 5 Tbsp
- Gochujang (Korean Chili Paste), 3 Tbsp
- Sugar, 1 Tbsp
- Oligosaccharide (or Corn Syrup), 1 Tbsp
- Cooking Wine (Mirin, etc.), 1 Tbsp
- Oyster Sauce, 1 Tbsp
- Minced Garlic, 1 Tbsp (for sauce)
- Gochugaru (Korean Chili Flakes), 4 Tbsp
- Sesame Oil, 1 Tbsp
- Toasted Sesame Seeds, 1 Tbsp
Cooking Instructions
Step 1
On the cleaned squid bodies, make diagonal scores with your knife to create a diamond pattern. This helps the sauce penetrate better and makes the squid more tender.
Step 2
Check that the scores are evenly distributed across the entire squid body. Be careful not to cut too deep or too shallow.
Step 3
Cut the scored squid bodies in half. This is the first step to portioning them into bite-sized pieces.
Step 4
Cut the squid halves into pieces roughly the size of your index finger. This is a common and easy-to-eat size.
Step 5
Prepare all the vegetables by slicing them. Cut the green onion and chili peppers diagonally. Slice the carrot similarly, about the same thickness as the peppers. Slice the onion into thin strips.
Step 6
In a bowl, combine all the sauce ingredients (soy sauce, gochujang, sugar, oligosaccharide, cooking wine, oyster sauce, minced garlic, gochugaru). Whisk thoroughly until well blended and smooth. It’s important to dissolve any clumps.
Step 7
Heat a generous amount of cooking oil in a wide pan over medium heat. Add the 1/2 Tbsp of minced garlic and stir-fry until fragrant. Then, add the prepared squid and stir-fry quickly until the surfaces just turn opaque.
Step 8
As soon as the squid starts changing color, add all the prepared sauce to the pan. Stir and toss the squid with the sauce until it’s evenly coated.
Step 9
Turn the heat up to high and cook until the sauce reduces by about half, becoming a thicker glaze. Continue stirring to combine the squid’s juices with the sauce.
Step 10
Once the sauce has reduced by half, add the prepared vegetables (onion, green onion, chili peppers, carrot) and the 1 Tbsp of oligosaccharide. Stir-fry quickly over high heat until the vegetables are tender-crisp and well combined with the sauce.
Step 11
Finally, when the sauce has almost completely reduced, stir in 1 Tbsp of sesame oil and sprinkle with toasted sesame seeds. Give it one last mix, and your delicious stir-fried squid is ready to be served! Enjoy it over a bowl of warm rice.
