Cooking Instructions

Step 1

Begin by preparing all the necessary ingredients for your Spicy Stir-Fried Squid. The freshness of the squid is key to a delicious dish, so select a plump and vibrant one if possible.

Step 2

Slice the onion into thick strips. Cut the green onion and Korean green chilies diagonally into manageable pieces to release their aromas. Adjust the number of chilies based on your preferred spice level.

Step 3

Clean and prepare the squid, then cut it into bite-sized pieces (about 2-3 cm). Leaving the skin on can enhance the squid’s unique flavor and chewy texture.

Step 4

In a mixing bowl, combine the cut squid with all the marinade ingredients: gochujang, gochugaru, soy sauce, rice wine, brown sugar, minced garlic, and minced ginger. Gently mix everything together until the squid is well coated. Cover the bowl with plastic wrap and refrigerate for at least 15 minutes to allow the flavors to meld beautifully.

Step 5

Heat the chili oil in a pan over medium heat. Add the sliced green onions and onions, and sauté until fragrant and slightly softened, about 2-3 minutes. Then, increase the heat to high and add the marinated squid. Stir-fry for about 1 minute until the squid is just cooked through – be careful not to overcook it, as it can become tough. Add the sliced Korean green chilies and stir-fry for another 10 seconds over high heat to infuse the dish with their spicy essence.

Step 6

Finally, add the finishing seasonings: drizzle in the sesame oil, add a pinch of black pepper for aroma, and sprinkle with sesame seeds for a nutty finish.

Step 7

Give everything a final toss to combine. Your delicious Spicy Stir-Fried Squid (Ojingeo Duruchigi) is now ready! Serve hot with rice or enjoy it as part of a lettuce wrap.
