  • Pork shoulder (apri-ri-sal) 300g (cut into bite-sized pieces)
  • Bean sprouts 200g (rinsed under cold water and drained)
  • Onion 1/2 (thinly sliced)
  • Green onion 1/4 (chopped)
  • Garlic 1 clove (thinly sliced)

Seasoning
  • Mihyang (or cooking wine) 1 Tbsp
  • Sugar 1/2 Tbsp
  • Minced garlic 1 Tbsp
  • Soy sauce 2 Tbsp
  • Sesame oil 2 Tbsp
  • Oyster sauce 2 Tbsp
  • Black pepper to taste
  • Sesame seeds to taste

Cooking Instructions

Step 1

Prepare 300g of fresh pork shoulder (apri-ri-sal), cut into bite-sized pieces. Gently pat the pork dry with paper towels to remove any excess moisture.

Step 2

In a large bowl, combine the pork with 1 Tbsp Mihyang (or cooking wine), 1 Tbsp minced garlic, 1/2 Tbsp sugar, and 2 Tbsp soy sauce. Mix gently with your hands until well combined, and let it marinate for 10 minutes. This allows the flavors to penetrate the meat.

Step 3

Rinse the bean sprouts thoroughly under cold water and drain well. Thinly slice the onion. Chop the green onion and thinly slice the garlic.

Step 4

Heat about 1 Tbsp of cooking oil in a pan over medium-high heat. Add the sliced onions and garlic, and stir-fry until fragrant, about 1-2 minutes.

Step 5

Push the onions and garlic to the side of the pan. Add the marinated pork to the center and stir-fry over high heat until it’s golden brown and cooked through. Make sure to break up the pork as it cooks so it doesn’t clump together.

Step 6

Once the pork is almost fully cooked, use a chopstick or spatula to cut it into smaller, bite-sized pieces if necessary. This makes it easier to eat and helps the sauce adhere better.

Step 7

Add the prepared bean sprouts and chopped green onions to the pan. Pour in 2 Tbsp of oyster sauce and stir-fry quickly over high heat for about 1-2 minutes. The key here is to keep the bean sprouts crisp – avoid overcooking them, as they can become mushy.

Step 8

Finally, drizzle in 1 Tbsp of sesame oil and a pinch of black pepper. Give it a final toss to combine. Transfer the delicious stir-fried pork and bean sprouts to a serving plate and sprinkle with sesame seeds for an extra nutty flavor. Enjoy this delightful dish with a bowl of hot rice!
