  • Gochujang (Korean chili paste) 3 Tbsp

  • Gochugaru (Korean chili flakes) 4 Tbsp
  • Soy sauce 7 Tbsp
  • Sugar 2 Tbsp
  • Oligosaccharide (or corn syrup) 2 Tbsp
  • Plum extract 3 Tbsp
  • Cooking wine (Mirin, etc.) 2 Tbsp
  • Black pepper, a pinch

Cooking Instructions

Step 1

First, let’s prepare the sauce, which is the key to a delicious Jeyuk Bokkeum. In a bowl, combine 3 Tbsp gochujang, 1 Tbsp minced garlic, 4 Tbsp gochugaru, 7 Tbsp soy sauce, 2 Tbsp sugar, 2 Tbsp oligosaccharide, 3 Tbsp plum extract, 2 Tbsp cooking wine, and a pinch of black pepper. Mix them thoroughly until well combined. Precise measurements are important for the perfect sauce balance.

Rinse the pork shoulder briefly under running water and pat it dry with paper towels. Cut the pork into bite-sized pieces. Place the cut pork into the prepared sauce and mix well by hand, ensuring the marinade coats every piece of meat. Letting it marinate for at least 30 minutes will enhance the flavor.

While the pork is marinating, let’s prepare the vegetables. Peel and thinly slice the onion. Wash the scallions and cut them diagonally into 2-3 inch lengths. Having the vegetables prepped makes the cooking process much smoother.

Heat a pan over medium-high heat. Add the marinated pork and stir-fry. A helpful tip is to only cook half of the marinated pork at a time, and either refrigerate the rest for later use or add it in batches. This prevents the pork from becoming tough and keeps it tender.

When the pork is about 70-80% cooked, add the sliced onion and chopped scallions to the pan. Continue to stir-fry together over medium heat until the onions become translucent and the scallions are fragrant. This step helps to meld the sweetness of the vegetables with the savory pork.
