Here’s a special recipe for Jeyuk Bokkeum, a beloved Korean dish, using tender pork shoulder. Experience the fantastic harmony of spicy-sweet sauce and chewy pork!
Main Ingredients- 250g Pork shoulder, thinly sliced
- 1/2 stalk Green onion, cut into large pieces
- 1/4 Carrot, sliced into semi-circles
- 1/2 Onion, sliced into thick strips
- 5-6 cloves Garlic, thinly sliced
- 1 Pepper (regular or Korean Cheongyang chili pepper), diagonally sliced
- 3 Tbsp Cooking oil
- A pinch of Sesame seeds (for garnish)

- 1 Tbsp Gochugaru (Korean chili flakes, adjust for spiciness)
- 1 Tbsp Minced garlic (for rich flavor!)
- 2 Tbsp Soy sauce (for umami)
- 1 Tbsp Sesame oil (for nuttiness)
- 1 Tbsp Gochujang (Korean chili paste, for deep flavor)
- A pinch of Black pepper (for a clean finish)

Cooking Instructions
Step 1
In a bowl, combine 2 Tbsp sugar, 1 Tbsp gochugaru, 1 Tbsp minced garlic, 2 Tbsp soy sauce, 1 Tbsp sesame oil, 1 Tbsp gochujang, and a pinch of black pepper to create the spicy and sweet sauce. Whisk until well combined.
Step 2
Using a spatula or spoon, stir the sauce ingredients thoroughly until they are smoothly incorporated and no lumps remain. It’s important to ensure the sugar is dissolved for a smooth texture.
Step 3
Add the prepared pork shoulder slices to the sauce and gently mix with your hands, ensuring every piece is coated. Let it marinate for about 10-15 minutes; this helps tenderize the meat and allows the flavors to penetrate deeply.
Step 4
While the pork is marinating, prepare your vegetables. Slice the carrot into semi-circles, and thinly slice the garlic. Cut the green onion into large pieces – this adds a nice texture when eaten. Slice the onion into thick strips and diagonally slice the chili pepper(s). Adding a variety of vegetables enhances the dish’s visual appeal and texture.
Step 5
Heat 3 Tbsp of cooking oil in a pan over medium heat. Add the marinated pork and stir-fry. It’s best to cook it over medium heat rather than high to allow the pork to cook through and develop a nice sear without burning. Cook until the surface of the pork is lightly browned, being careful not to let the juices escape.
Step 6
Once the pork is partially cooked and its surface has started to brown, add the sliced onion, garlic, carrots, and chili peppers to the pan. Stir-fry everything together until the vegetables become tender and translucent. Continue to cook, mixing well with the pork.
Step 7
When the pork and vegetables are fully cooked and the sauce has thickened slightly, add the large pieces of green onion. Stir-fry quickly for just about 30 seconds until the green onions are slightly wilted, then immediately turn off the heat. Avoid overcooking the green onions, as they can become mushy.
Step 8
