Stir-Fried Pork (Jeyuk Bokkeum)

Main Ingredients- Pork (Pork Belly or Pork Shoulder) 200g
- Cabbage 2 large leaves (approx. 1/4 head)
- Onion 1/2 medium
- Garlic 4 cloves
- Green Onion (Scallion) 1/2 stalk
- Carrot 1/5 medium
- Cheongyang Pepper (Korean Hot Pepper) 1 (optional)
- Sake (or Mirin) – generously (for removing pork odor)
Cooking Instructions
Step 1
First, prepare all your vegetables. Thinly slice the onion, and thinly slice the garlic. Tear or chop the cabbage into bite-sized pieces. Slice the green onion and Cheongyang pepper into long strips. Slice the carrot thinly and then cut it into three pieces for easy eating (about 1.5mm thick is ideal).

Cut the pork into bite-sized pieces. Place the pork in a bowl. To remove any pork odor, pour in enough sake (or mirin) to generously cover the meat. Add a pinch of salt and sprinkle 2-3 times with black pepper. Mix lightly and let it marinate for 10 minutes.

While the pork is marinating, let’s make the sauce! To the marinated pork, add Gochujang (2 Tbsp), Gochugaru (1/2 Tbsp), Soy Sauce (1/2 Tbsp), Sugar (1 Tbsp), Minced Garlic (1 Tbsp), and Sesame Oil (1 Tbsp). Mix everything together thoroughly with your hands, massaging the marinade into the meat. Let it marinate for another 20 minutes to allow the flavors to penetrate.

Now, let’s start cooking! Heat a pan over medium heat and add a little cooking oil. Add the sliced onion, cabbage, carrot, garlic, green onion, and Cheongyang pepper. Stir-fry until the vegetables are slightly softened and fragrant. This step is crucial for developing the flavors.
