How to Make Delicious Stir-Fried Pork Belly with Frozen Thinly Sliced Pork Belly, Featuring a Secret Sauce Recipe
Our family loves meat, so we often cook various meat dishes! Today, I’ll show you how to make Jeyuk Bokkeum (spicy stir-fried pork) using thinly sliced frozen pork belly. Because we’re using thinly sliced pork belly, the cooking time is significantly reduced. This versatile dish is perfect as a side for rice, an appetizer with drinks, or even more delicious served over rice as a donburi. Here’s my Daepae Jeyuk Bokkeum recipe!
Main Ingredients- 500g thinly sliced pork belly (Daepae Samgyeopsal)
- 1/2 onion
- 1/3 green onion
- Sesame oil, to taste
- Toasted sesame seeds, to taste
Spicy & Sweet Sauce- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp gochujang (Korean chili paste)
- 2 Tbsp soy sauce
- 2 Tbsp sugar
- 1 Tbsp corn syrup (or oligodang)
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
To create a well-developed sauce, let’s start by making the sauce mixture first! In a bowl, combine 2 Tbsp gochugaru, 2 Tbsp gochujang, 2 Tbsp soy sauce, 2 Tbsp sugar, 1 Tbsp corn syrup, and 1 Tbsp minced garlic. Mix them thoroughly until well combined. This amount of sauce is perfectly suited for 500g of thinly sliced pork belly, but feel free to adjust the sauce quantity according to the amount of meat you’re using.
Step 2
Next, let’s prepare the vegetables. Thinly slice 1/2 onion. Slice 1/3 green onion diagonally. I used pre-chopped frozen green onions, so I used finely chopped ones. Cutting them diagonally also looks more appealing. If you like it spicier, you can also slice 1-2 Cheongyang peppers. I omitted them since my children would be eating this dish.
Step 3
In a slightly deep pan, add the thinly sliced pork belly and then the prepared sauce. Stir and cook them together. While marinating the meat in the sauce beforehand would yield a deeper flavor, most thinly sliced pork belly is often frozen, so I skipped the marinating step. However, because the meat is so thin, it absorbs the sauce well, so you don’t need to worry!
Step 4
Since we’re using thinly sliced pork belly, it cooks very quickly. Once the pork belly is almost cooked, add the sliced onions and green onions to the pan. Continue stir-frying over high heat until the pork belly is completely cooked through.
Step 5
Once the thinly sliced pork belly is fully cooked, drizzle in a little sesame oil.
Step 6
Sprinkle with toasted sesame seeds and serve on a plate. Your delicious Daepae Jeyuk Bokkeum is ready! If you find the taste is a bit bland, you can add a little more soy sauce to adjust the seasoning.

Ta-da! The spicy and sweet Daepae Samgyeopsal Jeyuk Bokkeum is complete!! The tender pork belly is perfectly coated with the savory and slightly sweet sauce, making it incredibly delicious! The kids enjoyed it as a side dish over rice, my husband enjoyed it with some drinks as a tasty appetizer, and I made a hearty Jeyuk Bokkeum donburi by piling it over rice. I absolutely loved it as a rice bowl too!
