Main Ingredients

  • 3 medium-sized octopus, cleaned
  • 1 Korean green chili pepper (Cheongyang chili)
  • 1 onion
  • 1 green onion
  • 1/3 Korean zucchini (Aehobak)
  • 1/4 carrot

Seasoning

  • 1 Tbsp minced garlic
  • 1 Tbsp gochujang (Korean chili paste)
  • 3 Tbsp soy sauce (brewing soy sauce preferred)
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp sugar
  • 1 Tbsp cooking wine (Mirin or Cheongju)
  • A pinch of black pepper
  • 1 Tbsp sesame oil
  • 1 Tbsp cooking oil
  • A sprinkle of sesame seeds

Cooking Instructions

Step 1

First, prepare the cleaned octopus. Blanch the octopus in boiling water for about 2 to 3 minutes. Be careful not to overcook, as it can become tough. Rinse the blanched octopus under cold water and cut it into bite-sized pieces, about 3-4 cm long.

Chop all the vegetables into large, bite-sized pieces, considering their cooking times. Slice the carrot and zucchini into half-moons. Finely chop the green chili pepper and green onion. Slice the onion into thick strips for a pleasant texture.

Heat 1 tablespoon of cooking oil in a pot over medium-low heat. Add the minced garlic and stir-fry until fragrant. Be careful not to burn the garlic; a nice golden-brown color indicates it’s ready and adds great flavor.

Once the garlic is golden brown, turn off the heat temporarily. Add all the seasoning ingredients: 1 Tbsp gochujang, 1 Tbsp sugar, 1 Tbsp cooking wine, 3 Tbsp soy sauce, 2 Tbsp gochugaru, and a pinch of black pepper. Mix everything thoroughly until well combined. (Turning off the heat before adding the seasonings helps prevent burning).

Add the prepared vegetables to the well-mixed seasoning sauce and stir-fry them quickly over high heat. It’s important to only stir-fry them until they are slightly softened. Once the vegetables are partially cooked, add the blanched octopus and continue to stir-fry.

When the octopus and vegetables are nearly cooked, drizzle in 1 tablespoon of sesame oil. Stir-fry for a little longer to enhance the nutty aroma and give the dish a glossy, appetizing finish. Your delicious stir-fried octopus is almost ready!
