Main Ingredients- Aged kimchi, appropriate amount (adjust quantity to your preference)
- Medium-sized anchovies, 15g (for broth/flavor)
- Green onion, 2/3 stalk (sliced diagonally)
Seasoning- Won-dang (sugar) or sugar, 1/2 Tbsp
- Plum extract, 1/2 Tbsp
- Cooking oil, 2 Tbsp
- Sesame oil, 2 Tbsp
- Toasted sesame seeds, 1 Tbsp

Cooking Instructions
Step 1
First, thoroughly remove the innards from the anchovies. (The dark innards in anchovies can cause a bitter taste.) Lightly toasting the cleaned anchovies in the microwave for about 30 seconds can reduce any fishy smell and make them more fragrant.
Step 2
Prepare 100ml of water to help remove any potential fishiness from the anchovies. This water will be used later with the anchovies to simmer the kimchi.
Step 3
Drain the aged kimchi well using a sieve. If too much kimchi juice remains, the seasoning of the stir-fry might be off. Once drained, cut the aged kimchi into bite-sized pieces. Cutting them too large might take longer to cook.
Step 4
Heat a pan over medium-low heat, add 2 Tbsp of cooking oil, and then add the cut aged kimchi. Stir in 1/2 Tbsp of Won-dang (or sugar) and 1/2 Tbsp of plum extract. Stir and cook evenly while ensuring the kimchi doesn’t burn. The sugar helps to balance the kimchi’s sourness and adds a savory depth.
Step 5
Once the kimchi is somewhat stir-fried, add the prepared anchovies and the anchovy-infused water (100ml) to the pan. Then, cover the stir-fried kimchi with the anchovies, close the lid, and simmer gently for about 5 minutes. This step allows the umami from the anchovies to permeate the kimchi, resulting in a richer flavor.
Step 6
After simmering for 5 minutes, remove the lid and continue to cook until the liquid has reduced to a desirable consistency. It’s important to adjust the thickness so it doesn’t become too dry.
Step 7
When the kimchi has reduced to the right consistency, add the diagonally sliced green onions and stir-fry everything together once more. The subtle sweetness and aroma of the green onions will blend with the stir-fried kimchi, enhancing its overall flavor.
Step 8
Finally, turn off the heat. Drizzle in 2 Tbsp of sesame oil and sprinkle with 1 Tbsp of toasted sesame seeds. The nutty aroma of the sesame oil and the crunchy texture of the sesame seeds will elevate the dish. Gently mix everything together to combine.
Step 9
And there you have it – a delicious stir-fried kimchi rice bowl! The sourness of the aged kimchi has disappeared, replaced by a spicy and savory flavor. Serve a generous portion of this stir-fried kimchi over warm rice, and optionally top with a fried egg for a hearty and satisfying meal!
