Main Ingredients

  • 8 eggs

Spicy & Sweet Sauce

  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Soy Sauce
  • 1-2 Tbsp Sugar (adjust to your preference)
  • 0.5 Tbsp Minced Garlic

Cooking Instructions

Step 1

First, we’ll boil the eggs. Place 8 eggs in a pot and cover them with just enough water. Bring to a boil over high heat, then reduce to medium heat and simmer for about 6 minutes. This cooking time will result in perfectly soft-boiled eggs with a lovely, jammy yolk. Once boiled, immediately rinse them under cold water to stop the cooking and then peel them carefully.

Step 2

Now, let’s make the delicious sauce and stir-fry the eggs. Get a medium-sized pan and add 1 Tbsp Gochujang, 1 Tbsp Gochugaru, 1 Tbsp Soy Sauce, 1-2 Tbsp Sugar (feel free to adjust the sweetness to your liking!), and 0.5 Tbsp minced garlic. Pour in 1 cup (200ml) of water and mix everything well. Bring the sauce to a boil over high heat, then add the peeled boiled eggs. Reduce the heat to low and let the eggs simmer in the sauce, allowing them to absorb the flavors and the sauce to thicken slightly. Gently roll the eggs around in the pan occasionally to ensure they are evenly coated with the sauce. Continue this until the sauce is nicely reduced and coats the eggs beautifully.

Step 3

Finally, it’s time to add the finishing touches! Just before turning off the heat, drizzle in about 1/2 Tbsp of sesame oil or sprinkle some toasted sesame seeds over the eggs for an extra nutty aroma and flavor. These stir-fried eggs are fantastic served over hot steamed rice. Enjoy this satisfying meal or a delightful side dish!
