Main Ingredients
  • 500g fresh duck meat
  • 1 bunch chives (approx. 30g)
  • 1 bag enoki mushrooms (approx. 100g)
  • 1 large green onion
  • 1/5 carrot (approx. 30g)
  • 1 onion (approx. 150g)
  • 2-3 Cheongyang peppers (Korean chili peppers)

Stir-frying Seasoning
  • 3 Tbsp chili oil
  • 1 Tbsp cooking oil

Cooking Instructions

Step 1

First, place the prepared duck meat (500g) into a large bowl. Since Ori Jumulleok requires marinating and resting the meat, using a generously sized bowl is recommended.

Step 2

Let’s make the special marinade base that adds sweetness and tenderness! In a blender, combine half an apple and 1 container of plain yogurt. Blend until smooth. This step helps tenderize the duck meat and adds a subtle sweetness and rich flavor.

Step 3

To the duck meat in the large bowl, add the blended apple-yogurt mixture along with 2 Tbsp gochujang, 1 Tbsp oyster sauce, 3 Tbsp gochugaru, 1 Tbsp soy sauce, 1 Tbsp pear concentrate, 2 Tbsp sesame oil, 2 Tbsp minced garlic, 2 Tbsp mirin, and a pinch of black pepper. Mix everything thoroughly with your hands, ensuring the seasoning coats the duck evenly.

Step 4

Now, let’s prepare the vegetables. Slice the large green onion diagonally into bite-sized pieces. Slice the onion similarly. Thinly slice the carrot. Trim the base of the enoki mushrooms and separate the strands. Finely chop the Cheongyang peppers for extra spice. Add the prepared vegetables, enoki mushrooms, and chopped peppers to the marinated duck. Mix well again. Let this marinate in the refrigerator for at least 30 minutes to 1 hour. This resting period allows the flavors to deeply penetrate the meat, enhancing the overall taste.

Step 5

Now it’s time to stir-fry. Heat a deep pan over high heat. Add 3 Tbsp chili oil and 1 Tbsp cooking oil, swirling to coat the pan. Stir-frying over high heat helps develop a smoky flavor.

Step 6

Add the marinated duck mixture to the hot pan and stir-fry quickly over high heat. Keep tossing and stirring to prevent burning. Taste a piece and adjust seasoning if needed by adding a bit more soy sauce or salt.

Step 7

When the duck is almost cooked through, add the bunch of prepared chives and gently toss to combine. Chives cook very quickly and can become mushy and lose their fragrance if overcooked, so add them at the very end.

Step 8

Turn off the heat immediately after tossing the chives. The residual heat from the pan is sufficient to cook the chives perfectly, maintaining their crisp texture and fresh aroma.

Step 9
