Main Ingredients
  • 140g chewy dried shredded squid (Jinmichae)
  • 1 pack fresh Korean chili peppers (about 150-200g)

Golden Ratio Sauce
  • 3 Tbsp savory soy sauce (Matganjang)
  • 1 Tbsp cooking wine (Mirin/Masool)
  • 1 Tbsp sugar
  • 2 Tbsp corn syrup (Mulyeot) for shine and sweetness
  • A pinch of minced garlic (about 1/2 tsp)
  • 1 Tbsp sesame oil for nutty aroma
  • 1 Tbsp sesame seeds

Cooking Instructions

Step 1

Let’s start with the star of today’s dish: one pack of fresh Korean chili peppers. (You can adjust the amount to your preference!)

Step 2

We’ll also use one pack of dried shredded squid, about 140g. This should be enough for 2-3 generous servings.

Step 3

First, cut the dried shredded squid into bite-sized pieces with scissors. Cutting them to a manageable length will make them easier to eat.

Step 4

If your dried shredded squid is too salty, you can rinse it briefly under cold water to remove some of the salt. A quick rinse under running water is sufficient.

Step 5

After rinsing, drain the squid well in a colander. Properly draining the water will prevent the dish from becoming soggy and help maintain a chewy texture.

Step 6

If the Korean chili peppers are too large, cut them in half or into bite-sized pieces. This allows the sauce to penetrate better.

Step 7

Smaller chili peppers can be used whole, but pricking them a few times with a fork is a simple trick that allows the sauce to seep into the peppers, making them much more flavorful. (It’s a really easy tip!)

Step 8

Now, let’s make the delicious sauce! In a bowl, combine 3 Tbsp of savory soy sauce, 1 Tbsp of cooking wine, 1 Tbsp of sugar, and 2 Tbsp of corn syrup. Stir well. Then, add a pinch of minced garlic, 1 Tbsp of sesame oil, and 1 Tbsp of sesame seeds. Mix everything together to create the complete sauce.

Step 9

Heat a pan and pour in the prepared sauce. Bring it to a rolling boil. Boiling the sauce will deepen its flavor and cook off any raw taste from the chili peppers.

Step 10

Once the sauce is bubbling, add the Korean chili peppers and stir-fry quickly over high heat for just a moment. The key is to cook them just until they soften slightly without becoming mushy.

Step 11

After briefly stir-frying the chili peppers in the sauce to coat them, it’s time to add the dried shredded squid. Toss them together so the peppers and squid are well combined.

Step 12

Once you add the squid, avoid stir-frying for too long, as it can become tough. Stir-fry for just 1-2 minutes, ensuring the sauce coats the squid evenly. When it develops a glossy sheen, your delicious Korean chili pepper and dried squid stir-fry is ready!

Step 13

Just before turning off the heat, drizzle in some sesame oil for added aroma and sprinkle generously with sesame seeds for a perfect, nutty finish.

Step 14

And there you have it! A wonderfully made Korean chili pepper and dried shredded squid stir-fry. It’s a great side dish for rice and also makes a fantastic snack or accompaniment to drinks.

Step 15

If you have any leftovers, scoop a portion into a bowl and chop it very finely with scissors. We’re preparing it for fried rice.

Step 16

Heat a pan, add a bowl of rice, and then add a generous amount of the finely chopped stir-fried squid and peppers. Stir-fry everything together. A simple yet delicious fried rice will be ready in no time.

Step 17

And with that, our fried rice made with the Korean chili pepper and dried shredded squid stir-fry is complete! It’s perfect for a light solo meal or a satisfying hearty dish. Enjoy your delicious meal!
