  • Dried Shredded Squid (Jinmichae) 300g (about 3 handfuls)

Seasoning Ingredients

  • Gochujang (Korean chili paste) 2 Tbsp
  • Gochugaru (Korean chili flakes) 1 Tbsp
  • Minced Garlic 1/2 Tbsp (approx. 5g)
  • Oligosaccharide 2 Tbsp
  • Sugar 1 Tbsp
  • Cooking Wine (Mirin, etc.) 1 Tbsp
  • Plum Extract 1 Tbsp
  • Sesame Oil 1 Tbsp
  • Sesame Seeds 1 Tbsp

Cooking Instructions

Step 1

First, prepare 300g of Jinmichae, the star ingredient for this delicious stir-fry. 300g is roughly three handfuls, perfect for a generous portion.

To soften the Jinmichae, soak it briefly in cold water for about 5 minutes. Be careful not to soak it for too long, as it might break apart.

Drain the Jinmichae thoroughly and let any excess water drip off in a colander. Now, cut the Jinmichae into bite-sized pieces, about 5-7cm long, using scissors or a knife.

In a small bowl or container, combine all the seasoning ingredients. Add 2 Tbsp Gochujang, 1 Tbsp Gochugaru, 1/2 Tbsp minced garlic, 2 Tbsp oligosaccharide, 1 Tbsp sugar, 1 Tbsp cooking wine, and 1 Tbsp plum extract.

Mix all the seasoning ingredients thoroughly with a spoon or whisk. Taste the seasoning mixture and adjust the sweetness or spiciness by adding more sugar, oligosaccharide, gochujang, or gochugaru according to your preference.

Heat a non-stick pan over low heat and add the prepared seasoning mixture. Once the seasoning starts to bubble, reduce the heat to very low. (Once you see small bubbles forming, it’s time to lower the heat!)

While the seasoning is simmering gently, add the prepared Jinmichae and stir-fry quickly. After adding the Jinmichae, maintain a low heat and stir continuously to prevent the seasoning from burning.

Toss and stir-fry briskly with a spatula to ensure the seasoning coats the Jinmichae evenly. Stir-frying quickly while it’s hot is key to achieving a moist texture and allowing the flavors to penetrate well, resulting in a delicious Jinmichae Bokkeum. Overcooking can make it tough.

Just before turning off the heat, add 1 Tbsp sesame oil and 1 Tbsp sesame seeds, and give it one final quick stir. Adding sesame oil and seeds off the heat preserves their aromatic flavor.
