Essential Ingredients- 170g cooked ark shell clams (meat only)
- 70g glass noodles (dangmyeon)
- 1/2 green bell pepper
- 1/2 red bell pepper
- 1/2 orange bell pepper
- 1/2 onion
- Small amount of carrot (optional)
Spicy & Sweet Sauce Ingredients- 2 Tbsp oyster sauce
- 2 Tbsp chili oil
- Pinch of black pepper
- 1 Tbsp minced garlic
- 1 Tbsp oligodang (corn syrup/oligosaccharide) – adjust to taste
- 2 Tbsp olive oil
- 2 Tbsp oyster sauce

Cooking Instructions
Step 1
If your clams are not pre-cooked, first purge them in salt water to remove sand, then rinse thoroughly. Boil them until cooked, then carefully extract the meat from the shells. Set the clam meat aside.
Step 2
Wash all the vegetables: green bell pepper, red bell pepper, orange bell pepper, onion, and carrot. Trim off any stems or cores. Slice them into thin, julienne strips that will complement the clams and noodles. A small amount of carrot will add a nice touch of color.
Step 3
Cook the glass noodles in boiling water according to the package instructions until they are tender yet still have a slight bite. Once cooked, drain them and rinse immediately under cold running water to stop the cooking process and prevent sticking. Drain them thoroughly in a colander to remove excess water; this is key for a good stir-fry texture.

Heat a wok or large skillet over medium heat. Add the chili oil and oyster sauce (1 Tbsp), and a pinch of black pepper. Swirl to combine. Add the julienned vegetables (bell peppers, onion, carrot) and stir-fry quickly until they are slightly softened but still have a bit of crispness. Avoid overcooking them.
Step 5
Add the prepared clam meat and the drained glass noodles to the skillet with the vegetables. Pour in the minced garlic, the remaining oyster sauce (1 Tbsp), oligodang, and olive oil. Increase the heat to high and stir-fry everything together briskly for 1-2 minutes, ensuring all ingredients are well coated with the sauce and heated through.
