Spicy & Sweet Stir-fried Chicken Breast
Enjoy Your Chicken Breast! ‘Chicken Breast Stir-fry’ Recipe

Many people buy chicken breast with the intention of dieting, only to end up storing it frozen indefinitely. (I’m guilty too!) So, I’ve prepared a delicious way to enjoy that leftover chicken breast! Today’s first feature is a ‘Chicken Breast Stir-fry’. This recipe is perfect for a simple yet impressive meal or as a delightful appetizer.
Main Ingredients- 2 pieces of chicken breast (approx. 300-400g)
- 1/2 onion
- 1/2 green onion
Seasoning Ingredients- 1 tsp soy sauce
- 1 tsp gochugaru (Korean chili flakes)
- 1/2 tsp minced garlic
- 1 tsp gochujang (Korean chili paste)
- 1 tsp oligosaccharide (or corn syrup)
- 1 tsp cooking wine (mirin, etc.)
- A pinch of black pepper
- 1 tsp soy sauce
- 1 tsp gochugaru (Korean chili flakes)
- 1/2 tsp minced garlic
- 1 tsp gochujang (Korean chili paste)
- 1 tsp oligosaccharide (or corn syrup)
- 1 tsp cooking wine (mirin, etc.)
- A pinch of black pepper
Cooking Instructions
Step 1
Rinse the chicken breast under cold running water and pat it dry. Cut it into bite-sized pieces, about 2-3 cm. Cutting them into manageable pieces will ensure they cook evenly and quickly.

Step 2
In a bowl, combine the cut chicken breast with 1 tsp soy sauce, 1 tsp gochugaru, 1/2 tsp minced garlic, 1 tsp gochujang, 1 tsp oligosaccharide, 1 tsp cooking wine, and a pinch of black pepper. These seasonings will infuse the chicken with rich flavor.

Step 3
Peel and thinly slice the onion into approximately 0.5 cm thick pieces. The onion will add a pleasant sweetness and texture when stir-fried. Add the sliced onion to the bowl with the chicken and mix well with your hands, ensuring the marinade coats everything thoroughly.

Step 4
Once the chicken and onion are well-coated with the marinade, finely chop the green onion. Add the chopped green onion to the bowl and mix gently one more time. The fresh aroma of the green onion will enhance the dish as it cooks.

Step 5
While you can cook it immediately, marinating it further will deepen the flavors. For the best taste, cover the bowl or transfer the mixture to an airtight container and refrigerate for at least 6 hours, or preferably overnight. This marination period will tenderize the chicken and allow the flavors to meld beautifully.

Step 6
Heat a lightly oiled pan over medium-high heat. Add the marinated chicken breast mixture. Stir-fry briskly, moving the chicken around to prevent sticking and to seal in the juices. Keep stirring with a spatula to ensure even cooking.

Step 7
Continue to stir-fry for about 10 minutes. To check for doneness, take the largest piece of chicken breast, cut it in half, and ensure the inside is fully cooked through. If it’s not cooked, continue stir-frying for a few more minutes. Once the chicken is cooked through, glossy, and looks appetizing, transfer it to a serving dish and enjoy! It’s perfect as a side dish with rice or as a delicious appetizer.
