Cooking Instructions
Step 1
First, prepare the ground beef. Gently press the beef with paper towels to remove any excess blood. This helps ensure a clean flavor without any gamey taste.
Step 2
Now, let’s season the ground beef. In a bowl, combine 2 Tbsp mirin, 2 Tbsp soy sauce, 1 Tbsp sugar, a pinch of black pepper, and 1 Tbsp minced garlic. Mix well with your hands. (Adding the Cheongyang pepper now can make it very spicy, so it’s recommended to add it later when stir-frying.)
Step 3
Heat a pan over medium-high heat, then add the seasoned ground beef. Stir-fry quickly, breaking up any clumps with a chopstick or spatula to ensure even cooking.
Step 4
Once the beef is almost cooked through, transfer it to a separate bowl temporarily. In the same pan, add the finely chopped onion and the white part of the scallion. Sauté over medium heat until fragrant. Add an additional 1 Tbsp of minced garlic and continue to stir-fry.
Step 5
When the vegetables become slightly translucent, add 6 Tbsp gochujang, 2 Tbsp maesil cheong, 6 Tbsp pear juice, and 1 Tbsp honey. Stir well to combine the sauce ingredients and cook until the gochujang is well incorporated. (If you like it spicier, add the chopped Cheongyang pepper at this stage.)
Step 6
Once the sauce has smoothly blended, return the stir-fried beef to the pan. Reduce the heat to low and stir-fry everything together until well combined. Finish by drizzling in 1 Tbsp of sesame oil and sprinkling with toasted sesame seeds for extra flavor and shine. A final gentle stir, and your delicious spicy stir-fried beef with gochujang is ready!
