Spicy Seasoning Sauce- 2 Tbsp Gochujang (Korean chili paste)
- 2.5 Tbsp Gochugaru (Korean chili flakes, fine)
- 2 Tbsp Mirin (rice wine)
- 2 Tbsp Soy Sauce
- 1.5 Tbsp Sugar (adjust to taste)
- 1 Tbsp Sesame Oil
- 1 Tbsp Minced Garlic
- 2 Tbsp Gochujang (Korean chili paste)
- 2.5 Tbsp Gochugaru (Korean chili flakes, fine)
- 2 Tbsp Mirin (rice wine)
- 2 Tbsp Soy Sauce
- 1.5 Tbsp Sugar (adjust to taste)
- 1 Tbsp Sesame Oil
- 1 Tbsp Minced Garlic
Cooking Instructions
Step 1
First, wash the bean sprouts thoroughly and drain them. Spread them evenly at the bottom of a pot. Since they will shrink as they cook, feel free to use a generous amount.
Step 2
Peel and thinly slice half an onion. The sweetness of the onion will add a wonderful depth of flavor to the dish.
Step 3
Chop the green onion. Wash the perilla leaves, pat them dry, then roll them up and julienne them as thinly as possible for a pleasing presentation and easy eating. If you enjoy extra spiciness, diagonally slice one green chili pepper.
Step 4
On top of the bean sprouts in the pot, arrange the thinly sliced pork belly generously, either by rolling it up or layering it without overlapping. The pork belly will cook and meld beautifully with the bean sprouts, making it even more delicious.
Step 5
Now, evenly distribute the sliced onion, chopped green onion, julienned perilla leaves, and sliced green chili pepper over the pork belly. The vibrant colors will make the dish look appetizing.
Step 6
In a separate bowl, mix all the seasoning sauce ingredients: 2 Tbsp Gochujang, 2.5 Tbsp Gochugaru, 2 Tbsp Mirin, 2 Tbsp Soy Sauce, 1.5 Tbsp Sugar, 1 Tbsp Minced Garlic, and 1 Tbsp Sesame Oil. Pour this sauce evenly over the ingredients in the pot. Cover the pot and cook over medium heat. It should take about 10-15 minutes. Stir occasionally to ensure even cooking.
Step 7
You’ll notice that the ingredients, which initially filled the pot, reduce significantly as they cook. Once everything is tender and the flavors have melded together, your delicious Kongbul is ready! It’s also fantastic served over hot rice and mixed in. Enjoy this delightful meal with your family!
