Main Ingredients

  • 140g of Korean green chili peppers (Gwarilye-goshu) – choose fresh, plump ones
  • 2 Tbsp pancake mix (buchim-garu) – this will coat the peppers like a light batter
  • 1 Tbsp gochugaru (Korean chili powder) – for a nice spicy kick
  • 1 Tbsp minced garlic – an essential ingredient for flavor
  • 1 Tbsp sesame oil – for a nutty aroma and shine
  • 1 Tbsp rice wine (mirin or cooking sake) – to remove any potential bitterness and tenderize
  • 2 Tbsp soy sauce – for the savory base
  • 1 Tbsp oligosaccharide (or corn syrup/honey) – for a subtle sweetness
  • A pinch of toasted sesame seeds – for garnish and extra flavor

Cooking Instructions

Wash the Korean green chili peppers (Gwarilye-goshu) thoroughly under running water. After washing, carefully trim off the stems with scissors or a knife. Leaving stems can make them difficult to eat, so be thorough with this step.

Place the trimmed green chili peppers into a zip-top bag or any resealable plastic bag. Sprinkle the 2 tablespoons of pancake mix evenly over the peppers. Close the bag securely and shake gently. This will lightly and evenly coat the peppers, giving them a chewy texture when steamed.

Arrange the coated green chili peppers in a steamer basket over simmering water. Cover the steamer and cook for about 5 minutes. Be careful not to overcook, as they can become too soft. Steaming them briefly keeps them slightly crisp and chewy, which is key to this dish.

Once steamed, carefully transfer the green chili peppers from the steamer to a mixing bowl. Allow them to cool down slightly (lose some steam) before mixing with the dressing. This prevents the dressing from becoming clumpy and helps it distribute evenly. Also, handling them while they are very hot can tear the peppers.

Now, let’s make the delicious seasoning! Add 1 tablespoon of gochugaru, 2 tablespoons of soy sauce, 1 tablespoon of minced garlic, 1 tablespoon of sesame oil, 1 tablespoon of rice wine, and 1 tablespoon of oligosaccharide directly to the bowl with the peppers. (Tip: Add the toasted sesame seeds at the very end for maximum crunch and flavor!)

Gently toss and mix everything together, being careful not to mash the peppers. Use chopsticks or a spatula to lift and fold the peppers from the bottom up.
