Main Ingredients- 1 eggplant
- 1/6 onion
- 1/2 stalk green onion
Seasoning- 2 Tbsp soy sauce
- 1 Tbsp red pepper flakes (gochugaru)

- 1 Tbsp corn syrup (or honey)

Cooking Instructions
Step 1
First, wash the eggplant thoroughly and cut it into bite-sized pieces (about 5-7 cm long). Place a steamer basket over boiling water, add the eggplant, and steam for 5 minutes. Turn off the heat and let it sit in the steamer for another 2 minutes to allow the residual heat to gently cook the inside until tender.
Step 2
While the eggplant is steaming, prepare the other ingredients. Thinly slice the onion and finely chop the green onion. The key to a delicious eggplant salad is to steam the eggplant just until tender, not mushy. Transfer the steamed eggplant to a large bowl and let it cool slightly.

If you steamed the eggplant in two batches, steam the second batch for another 5 minutes, turn off the heat, and let it sit for a short while to become tender. Ensure all pieces of eggplant are cooked until soft.
Step 4
Once the eggplant has cooled enough to handle, gently tear or shred it lengthwise into your desired size. It’s best to work with it after it has cooled a bit, as hot eggplant can easily fall apart. Add the sliced onion and chopped green onion.
Step 5
In a large bowl, combine the prepared eggplant, sliced onion, and green onion. Add the seasoning ingredients: 2 Tbsp soy sauce, 1 Tbsp red pepper flakes, 2 Tbsp minced garlic, 1 Tbsp corn syrup, and 1 Tbsp sesame oil. Gently mix everything together until well combined. Finally, sprinkle with sesame seeds. This spicy and sweet eggplant salad is ready to be enjoyed – it’s the perfect accompaniment to a bowl of rice!
