Spicy & Sweet Sriracha Chicken Donburi
Quick Sriracha Chicken Donburi Made with Store-Bought Soba Sauce
A delicious chicken donburi recipe featuring a spicy and sweet sriracha sauce, made easily by utilizing readily available soba sauce. Enjoy a wonderful meal at home with minimal effort!
Special Sriracha Sauce- 1/4 cup Soba Sauce
- 1/4 cup Sriracha Sauce

Main Ingredients- 1 Chicken thigh (approx. 200g)
- Pinch of black pepper

- 1/2 Tbsp Ginger juice
- 2 Tbsp Potato starch
- 1/4 Onion

- Scallions (for garnish)

Cooking Instructions
Step 1
Lightly score the skin side of the chicken thigh with a knife multiple times. This helps the marinade penetrate better and gives a nicer shape when cooked.
Step 2
Cut the scored chicken thigh into bite-sized pieces, about 2-3 cm each.

In a bowl, combine the cut chicken pieces with salt, pepper, and ginger juice. Gently mix and let it marinate for about 5 minutes to allow the flavors to meld.

Add 1 tablespoon of potato starch to the marinated chicken and mix well until a sticky coating forms. It’s important to coat the chicken evenly.

In a separate bowl, whisk together 1/4 cup of soba sauce, 1/4 cup of sriracha sauce, and 1/4 cup of water to create the special sriracha sauce. (Tip: Adjust the amount of sriracha to your preference.)

Thinly slice the onion and mince or thinly slice the garlic. Chop the scallions for garnish.
Step 7
Add the remaining 1 tablespoon of potato starch to the chicken coated in the first layer of starch. Toss lightly to create a crispy coating, similar to tempura batter.

Heat a generous amount of cooking oil in a pan over medium-high heat (enough to submerge the chicken halfway). Fry the chicken pieces until golden brown and crispy on all sides, ensuring the inside is cooked through and moist.

In the same pan used for frying the chicken (leaving a little oil), add the sliced garlic and onion. Sauté until the onion becomes translucent. Pour in the prepared sriracha sauce and bring to a simmer over medium-low heat, stirring constantly until the sauce thickens to your desired consistency.
Step 10
