Main Ingredients- 2 cleaned squids (approx. for 2 servings)
- 1/2 onion
- 1 handful of cabbage (approx. 1/4 head)
- 2 stalks of green onion
- 4 cloves minced garlic (or 1 Tbsp)
Golden Ratio Sauce- 1 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp gochujang (Korean chili paste)
- 2 Tbsp oligosaccharide (or corn syrup)
- 2 Tbsp mirin (rice wine)
- 1 Tbsp maesil-cheong (plum extract)
- 1 Tbsp oyster sauce
- Pinch of black pepper (optional)
- 1 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp gochujang (Korean chili paste)
- 2 Tbsp oligosaccharide (or corn syrup)
- 2 Tbsp mirin (rice wine)
- 1 Tbsp maesil-cheong (plum extract)
- 1 Tbsp oyster sauce
- Pinch of black pepper (optional)
Cooking Instructions
Step 1
Slice the thoroughly cleaned squid into bite-sized pieces (about 1-1.5 cm). This recipe is suitable for approximately 2 servings.
Step 2
To add a smoky ‘bul-match’ flavor, add 1 Tbsp of gochugaru to a preheated pan and stir-fry briefly to release its aroma. Be careful not to burn it; proceed quickly over low heat.
Step 3
Add the prepared vegetables (1/2 onion, thinly sliced; 1 handful of cabbage, roughly chopped) and 4 cloves of minced garlic (or 1 Tbsp) to the pan and stir-fry together to develop their fragrance. Sauté until the vegetables are slightly softened.
Step 4
The key to a delicious squid stir-fry! In a bowl, combine the sauce ingredients: 2 Tbsp gochujang, 2 Tbsp oligosaccharide, 2 Tbsp mirin, 1 Tbsp maesil-cheong, 1 Tbsp oyster sauce, and a pinch of pepper. Mix well until smooth. The balance of sweetness, spiciness, and umami is crucial.
Step 5
Once the vegetables are sautéed, add the prepared squid and stir-fry quickly. Overcooking the squid will make it tough, so cooking it rapidly over high heat is the trick! Finish by drizzling in 1 Tbsp of sesame oil for a nutty aroma.
Step 6
Final touches. Add 2 stalks of chopped green onion and stir-fry briefly to bring out their fresh aroma. Mix everything together for a perfectly cooked spicy squid stir-fry! Enjoy your meal.
Step 7
Serve the generous portion of squid stir-fry over warm rice. Sprinkle with sesame seeds for extra visual appeal and flavor. Mixing it with rice makes it incredibly delicious!
