  • 1/2 onion
  • 1 handful of cabbage (approx. 1/4 head)
  • 2 stalks of green onion
  • 4 cloves minced garlic (or 1 Tbsp)

Golden Ratio Sauce

  • 1 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp oligosaccharide (or corn syrup)
  • 2 Tbsp mirin (rice wine)
  • 1 Tbsp maesil-cheong (plum extract)
  • 1 Tbsp oyster sauce
  • Pinch of black pepper (optional)

Cooking Instructions

Step 1

Slice the thoroughly cleaned squid into bite-sized pieces (about 1-1.5 cm). This recipe is suitable for approximately 2 servings.

To add a smoky ‘bul-match’ flavor, add 1 Tbsp of gochugaru to a preheated pan and stir-fry briefly to release its aroma. Be careful not to burn it; proceed quickly over low heat.

Add the prepared vegetables (1/2 onion, thinly sliced; 1 handful of cabbage, roughly chopped) and 4 cloves of minced garlic (or 1 Tbsp) to the pan and stir-fry together to develop their fragrance. Sauté until the vegetables are slightly softened.

The key to a delicious squid stir-fry! In a bowl, combine the sauce ingredients: 2 Tbsp gochujang, 2 Tbsp oligosaccharide, 2 Tbsp mirin, 1 Tbsp maesil-cheong, 1 Tbsp oyster sauce, and a pinch of pepper. Mix well until smooth. The balance of sweetness, spiciness, and umami is crucial.
