Main Ingredients

  • 300g boneless chicken thigh, cut into bite-sized pieces (similar in size and length to the rice cakes)
  • 1 handful (approx. 100-150g) garae-tteok (Korean rice cakes), similar to tteokbokki size
  • 5 Tbsp cooking oil

Cooking Instructions

Step 1

First, rinse the 300g of boneless chicken thigh meat and cut it into bite-sized pieces, about 2-3 cm in length, similar to the size of the garae-tteok. If your rice cakes are hard, soaking them in cold water for about 10 minutes will soften them up.

Now, let’s make the delicious glaze! In a blender or bowl, combine 1 Tbsp gochujang, 2 Tbsp ketchup, 2 Tbsp sugar, 3 Tbsp corn syrup, 3 Tbsp soy sauce, 1.5 Tbsp minced garlic, 2 Tbsp water, and a pinch of black pepper. Blend or whisk until smooth. This sauce will be used to simmer the chicken and rice cakes.

We’ve made a generous amount of glaze, so it’s best to taste as you cook and adjust the amount as needed. Adding too much at once might make it too salty!

Heat 5 Tbsp of cooking oil in a pan over medium heat. Add the cut chicken thigh pieces and sauté until they are lightly browned and have a nice sear. This will help lock in the flavor.

Once the chicken is partially cooked, pour about half of the prepared glaze into the pan. Let it simmer over medium-low heat, allowing the glaze to coat and flavor the chicken.

As the glaze begins to bubble, add the softened garae-tteok (rice cakes) to the pan. Stir them in and let them simmer for about 2-3 minutes until they become tender and absorb the delicious glaze.

When the rice cakes are tender, add the chicken back into the pan if it was removed, or simply stir everything together to ensure the glaze coats both the chicken and the rice cakes evenly. Continue to cook over medium-low heat, stirring occasionally to prevent burning, for about 3-5 minutes, or until the chicken is cooked through and the sauce has thickened slightly. Make sure the chicken is cooked all the way to the center.

If you prefer a spicier kick, feel free to add more of the remaining glaze at this stage. Adjust the spice level to your personal preference.
