While dipping chilies in ssamjang is delicious, making them this way transforms them into a delightful side dish. For this recipe, mild, crisp Korean green peppers (Gochu) or cucumber peppers are ideal. Our family prefers it spicy, so we used young green chili peppers. It’s truly a simple, quick side dish that’s incredibly easy to make.

Main Ingredients

  • 5 young green chili peppers (or crisp Korean green peppers, cucumber peppers)

Seasoning Ingredients

  • 1/4 tsp Doenjang (soybean paste)
  • 1/4 tsp Gochujang (red chili paste)
  • 1/2 tsp Honey
  • 1 tsp Perilla oil (Deulgireum)
  • 1/2 tsp Minced garlic
  • A pinch of toasted sesame seeds

Cooking Instructions

Step 1

First, prepare 5 young green chili peppers. You can also use crisp Korean green peppers or cucumber peppers. Wash the chilies thoroughly under running water. Then, pat them completely dry with paper towels or a clean cloth. Ensuring they are dry is crucial for the seasoning to adhere well. Remove the stems and slice the chilies into 1cm bite-sized pieces.

Step 1

Step 2

In a bowl, combine 1/4 tsp Doenjang, 1/4 tsp Gochujang, 1/2 tsp honey, and 1/2 tsp minced garlic. Add 1 tsp of perilla oil for a nutty aroma and rich flavor. This blend of seasonings creates a perfect balance of spicy, sweet, and savory notes that will elevate the chili’s taste.

Step 2

Step 3

Add the sliced chilies to the bowl with the prepared seasonings. Gently toss and mix everything together using your fingertips. Be careful not to mash the chilies; the goal is to coat them evenly with the seasoning. Mix them lightly to maintain their crispness while ensuring the flavors are well incorporated.

Step 4

Finally, sprinkle a pinch of toasted sesame seeds on top for extra flavor and texture. It’s incredibly simple, isn’t it? Once mixed, it’s ready to be served in a dish. This chili jang salad is a fantastic side dish, especially when served with dishes like Samgyetang (ginseng chicken soup) or grilled meats. The perilla oil adds a wonderful savory depth, and the spicy-sweet seasoning makes it a refreshing accompaniment that cuts through richness. Enjoy this delicious and easy-to-make side dish!
