Main Ingredients

  • 3 sheets of square fish cakes (approx. 150g)
  • 1/4 stalk of green onion (approx. 30g)

Cooking Instructions

Step 1

First, let’s prepare the fish cakes. Bring a pot of water to a boil, add the 3 sheets of square fish cakes, and blanch them for about 1 minute. This step helps remove any excess oil from the fish cakes and allows them to absorb the seasoning better, enhancing their flavor.

Step 1

Step 2

Once blanched, remove the fish cakes from the hot water and quickly rinse them under cold running water. Afterward, use clean kitchen towels to thoroughly pat dry each piece of fish cake. This is crucial to prevent the seasoning from becoming watery and to ensure it adheres well.

Step 2

Step 3

Now, cut the dried fish cakes into bite-sized pieces. A common way is to slice them lengthwise into strips about 1.5 cm wide, or you can cut them into smaller, bite-sized pieces, especially if serving to children. Feel free to choose the shape that best suits your preference.

Step 3

Step 4

Next, prepare the green onion. You’ll need about 1/4 stalk. Finely chop it. It’s best to chop it not too thick so it blends well with the fish cakes and adds a pleasant texture.

Step 4

Step 5

Now it’s time to mix in the seasonings! In a large bowl, combine the sliced fish cakes and the finely chopped green onion.

Step 5

Step 6

Add all the seasoning ingredients to the bowl: 2 Tbsp gochugaru, 0.5 Tbsp minced garlic, 2 Tbsp soy sauce, 1.5 Tbsp oligosaccharide, 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds for a nutty aroma. (Tip: You can substitute oligosaccharide with sugar or corn syrup for sweetness, and adjust the amount of gochugaru to control the spiciness.)

Step 6

Step 7

Gently mix everything together with your hands, ensuring the seasoning coats the fish cakes evenly. It’s important to mix thoroughly so that the flavor penetrates every piece. Be gentle to avoid mashing the ingredients.

Step 7

Step 8

Your delicious spicy and sweet seasoned fish cakes, in the style of Chungmu gimbap, are now ready! They can be enjoyed immediately or chilled in the refrigerator for an even better taste. This dish is a perfect side for rice, a great addition to lunchboxes, and an excellent filling for gimbap!
