  • 2 servings udon noodles
  • 1/4 onion, thinly sliced
  • Cooking oil, for stir-frying
  • 1 Tbsp cooking sake or mirin (to remove seafood odor)
  • A handful of green onions, diagonally sliced (for garnish)

Spicy & Sweet Sauce

  • 2 Tbsp red chili powder (gochugaru)
  • 2 Tbsp soy sauce
  • 2 Tbsp sugar
  • 3 Tbsp oyster sauce
  • Pinch of black pepper

Cooking Instructions

To enhance freshness and completely eliminate any seafood odor, place the mixed seafood in a bowl. Add 1 Tbsp of cooking sake (or mirin) and gently mix. Let it marinate for about 5 minutes. This step effectively removes any fishy smell.

Wash and peel the 1/4 onion. Slice it thinly into strips, which will look appealing and provide a good texture when stir-fried.

In a small bowl, combine 2 Tbsp red chili powder, 2 Tbsp soy sauce, 2 Tbsp sugar, 3 Tbsp oyster sauce, and a pinch of black pepper. Mix well with a spoon to create the delicious sauce. Having the sauce pre-mixed makes cooking much smoother.

Bring a pot of water to a rolling boil. Add the 2 servings of udon noodles and cook for just about 1 minute. Be careful not to overcook, as they can become mushy. Immediately drain the noodles in a colander, ensuring all excess water is removed.

Heat a large, deep pan over medium heat and add a generous amount of cooking oil. Add the sliced onions and stir-fry until they become translucent. Sautéing the onions thoroughly brings out their sweetness, enhancing the overall flavor of the dish.

Once the onions are softened, add the drained seafood to the pan and stir-fry together. As the seafood begins to cook, pour in all the prepared sauce and stir-fry until the ingredients are well coated.

After ensuring the seafood is fully cooked, add the udon noodles to the pan. Stir-fry quickly to ensure the sauce evenly coats the noodles. The key is to stir-fry for less than a minute to prevent the noodles from breaking apart.
